How To make Spicy Shortbread Bites
2 tb Paprika
2 1/2 ts Coarse salt
1 1/8 ts Cayenne
7 tb Unsalted butter, softened
2 tb Sugar
1 c All-purpose flour
1 ts Curry powder
1/2 ts Ground cumin
Preheat oven to 350 deg F In a small bowl, whisk together paprika, 2 ts salt, and 1 ts cayenne and set aside. In a bowl with an electric mixer, beat butter with sugar until light and fluffy. In another bowl, whisk together remaining 1/2 ts salt, remaining 1/8 ts cayenne, flour, curry powder, and cumin. Beat flour mixture into butter mixture until just combined. On a lightly floured surface, knead dough about 8 times, or until it just comes together. Divide dough into 4 equal pieces. On a sheet of wax paper, roll each piece of dough into a 3/4-inch thick log. Sprinkle one quarter of spice mixture along the length of each log and roll in mixture to coat completely. Wrap each log in wax paper. Freeze dough just until firm, 15 to 20 minutes. Shortbread dough may be made 1 week ahead and frozen. Before proceeding with recipe, remove dough from freezer and let stand about 15 minutes, or until slightly softened to facilitate slicing.
Remove logs carefully from wax paper and slice into 1/2-inch thick rounds. Place rounds 1/4-inch apart on ungreased baking sheets and bake in batches in middle of oven 15 minutes, or until browned lightly. Gently loosen shortbread bites with a spatula from baking sheet (do not remove from sheet) and cool completely. Carefully transfer shortbread bites to a serving dish (they will be fragile) and serve as hors d'oeuvre. Makes about 140 shortbread bites.

Makes: 6 servings
Ingredients:
3/4 cup all-purpose flour
1 tsp pumpkin pie spice
Pinch salt
1/3 cup unsalted butter, at room temperature
3 tbsp granulated sugar
1/2 tsp vanilla extract
6 Twix Minis Chocolate, finely chopped
Instructions:
Whisk together flour, pumpkin pie spice and salt until blended; set aside. In separate bowl and using electric mixer, beat together butter and sugar until light and fluffy; beat in vanilla. Stir in flour mixture just until combined. Stir in chopped Twix® Minis. Pat dough into disk; wrap in plastic wrap and refrigerate for at least 30 minutes.
Preheat oven to 325°F. On lightly floured surface, roll out dough into 1/4-inch thickness. Cut into six 2-inch squares. Reserve remaining dough for another use.
Place cookies on parchment paper–lined baking sheet, spacing at least 2 inches apart; refrigerate for 10 minutes before baking.
Bake for 8 to 10 minutes or until bottoms are lightly golden and tops are set. Transfer to rack and let cool completely.
Tip: Roll remaining dough into 1/2-inch balls and flatten with fork for mini shortbread buttons.

Super Simple Rainbow Shortbread Bites
These little cookie bites are always a HIT at parties!
Shortbread Bites Recipe:
1/2 cup butter, room temperature
1/4 cup sugar
1/4 tsp almond or vanilla extract
1 1/4 cup All Purpose flour
1/4 tsp salt
4 tsp sprinkles
-Heat oven to 325 degrees
-Combine butter, sugar and almond or vanilla extract
-Beat at medium speed until creamy
-Reduce speed to low, add flour & salt. Beat until well
mixed. Stir in sprinkles
-Knead mixture 4-5 times in bowl until dough forms a ball.
-Pat dough evenly onto cutting board (I covered mine in plastic wrap to make things easier/cleaner!)
-Cut dough into small squares
-Place squares 1/2 inch apart on an ungreased
cookie sheet. Bake approximately 15 minutes or until
bottoms are a golden brown.

How to Make Billionaire's Shortbread Bites with Gold Dust | Recipe
This decadent little treat is a fun and incredibly delicious twist on the British classic millionaire's shortbread recipe. This is known as Scrooge McDuck's Billionaire's Shortbread in my house. Yummy, scrummy and easy to make with a no-fail caramel, dark chocolate mousse and of course, shortcrust pastry.
INGREDIENTS
SHORTCAKE PASTRY
-150g plain flour
-75g unsalted butter
-50g icing sugar
-1 egg yolk
-Pinch of salt
-Tablespoon of water
CARAMEL FILLING
-1 Tin of Condensed Milk Caramel
CHOCOLATE MOUSSE TOPPING
-2 eggs
-75g Dark chocolate
-Gold edible glitter
