The Best Meatloaf I Have Ever Made! Grass-Fed Lamb Meatloaf with spice
I have made a lot of meatloaf in my day, Blacksmiths is one of the best comfort food ideas. Regular junk meatloaf, home cooking grandma's meatloaf recipe, but the best home cooking meatloaf recipe I have had has to be this one Sassy made. We used 100% grass-fed ground lamb and a few select spices and herbs.
We wanted as much smoke as possible but needed a high temperature and didn't want to mess with firewood, so it was time to fire up the Traeger pellet grill. No meatloaf pan needed this time as we used the Grillaholics grill mat to keep things neat. And of course, South Texas Red to season it up just right.
If you want the recipe its in the video. Sassy shows you how to make meatloaf sauce. The Tzatziki Sauce Ingredients are below:
5-6 oz. thick whole milk Greek yogurt
Squeeze of a half lemon juice
1/2 tbsp etra virgin olive oil
3 garlic cloves
Pinch of sea salt
Pinch of pepper
1 tbsp of pepper
1 tbsp chopped dill
1 tbsp chopped mint

Korean Meatloaf: All the crave-able flavors of Korean barbecue in a comfort-food meatloaf with a sweet and tangy Korean glaze. This ain't your momma's meatloaf!

✅Ingredients
MEATLOAF:
• 1 pound lean ground beef
• 1 cup panko bread crumbs
• 1 tablespoon gochujang***
• 1 tablespoon soy sauce
• 1 tablespoon sesame seeds
• 6 cloves garlic, crushed
• 1 teaspoon ground ginger
• 1 teaspoon sesame oil
• 1 egg
KOREAN BBQ GLAZE:
• 1 tablespoon sesame oil
• 2 tablespoons cornstarch
• 1/2 cup soy sauce
• 1/2 cup rice vinegar
• 3/4 cup brown sugar
• 6 cloves garlic, minced
• 1 teaspoon ground ginger
• 1 teaspoon sesame seeds
✅Instructions
1:59 - Why you should use a pan larger than the meatloaf
1️⃣ Preheat oven to 350 degrees.
2️⃣ 00:28 - In a large mixing bowl, knead together ground beef, panko, gochujang, soy sauce, sesame seeds, garlic, ginger, sesame oil, and egg.
3️⃣ 01:49 - Shape the meat into a loaf and put it on a 4 sided baking sheet or 9x13 pan.
4️⃣ 02:14 - Bake for about 45 minutes.
5️⃣ 02:27 - Meanwhile, make the glaze. In a small saucepan over medium-high heat, whisk together the sesame oil and cornstarch. Stir in the soy sauce, rice vinegar, brown sugar, garlic, ginger, and sesame seeds. Bring to a simmer and cook until sauce thickens. Pour or brush half the sauce over the meatloaf about half-way through the cooking time.
6️⃣ 03:29 - Increase the oven temperature to 450 degrees. Pour or brush remaining sauce over the meat and bake an additional 15 minutes.
***You can also substitute with 1/2-1 teaspoon crushed red pepper flakes, the same amount of sriracha sauce, or if you don't want this to be spicy, simply leave it out.
