Texas kolaches are made in just a few minutes with a biscuit.
How are pigs in blanket different from kolaches? Pigs (sausage link) in a blanket can range from a scratch dough, a biscuit or rolled in a pancake. A traditional Czech kolache is a pastry dough with a fruit or sweet topping. A Texas kolache is a savory meat filling, usually sausage wrapped in a kolache pastry dough or in our case – a biscuit!

Hillbilly Jilly Sausage Kolache Recipe - Sausage in a Biscuit Blanket ~ Texas Kolache
Ingredients
● 1 package of smoked heat and eat breakfast sausages
● 1 can of your favorite biscuits
Directions
1. Preheat oven to 400 degrees
2. Wrap, pinch and fold one biscuit around each sausage and
place seam side down on greased cookie sheet
3. Bake for 10 – 14 minutes depending on oven and type of
biscuit
Note: Add a little cheese or use crescent rolls instead!

Polish Kolaczki (Filled Cookies)
A soft rich dough filled with fruit preserves, nuts or poppyseeds. Kołaczki are a traditional favorite in Poland and Central Europe.
In this video, I walk you through making the dough, prepare a nut filling, and talk about other fillings you might use.
We’ll roll out the Kołaczki dough and talk about several options for cutting it into 2-inch squares. I’ll share tips to ensure your cookies stay folded over while baking.
You’ll want to include these for Christmas and your baking for other special occasions. I bake them ahead of time and freeze until the day I need them. Dust them with powdered sugar just before serving.
Ingredients for dough
1 1/2 cups butter (340g), softened
8 ounces cream cheese (225 g), softened
3 cups all-purpose flour (360 g)
1/2 teaspoon salt
Cream the butter and cream cheese. Incorporate the flour and salt. Chill the dough for at least an hour or over night. Roll the dough to 1/4-inch thick and cut into 2-inch squares. Put 1/2-1 teaspoon of your favorite filling to the center. Lift up two opposing corners, pinch them together with a dab of water. Fold the point to one side. Bake at 350 F (180 C). Cool, dust with powdered sugar.
Nut filling Ingredients
8 ounces walnuts (225g)
1 cup sugar (200 g)
1 egg white
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
Add a few drops of water (if needed)
Finely chop the walnuts with a knife or steel blade in a food processor. Add the sugar, egg white, and extracts. If you mixture is too dry (not coming together) add a few drops of water. Use for Kołaczki or other recipes.

INGREDIENTS:
1 cup (2 sticks, 226 gr) unsalted butter, room temp
8 oz (225 gr) cream cheese, room temp
1/4 tsp vanilla extract
1/2 tsp kosher salt
2 1/4 cups (270 gr) all purpose flour (measured properly by spooning into measuring cups without packing down and leveling off)
solo brand filling of choice
powdered sugar for rolling and dusting

Kolaczki cookies are a traditional Polish cream cheese cookie. The cookie dough almost mimics a pastry and is filled with a variety of fillings such as apricot, prune, cherry, almond, poppy seed, and more!
I had never tasted or even heard of a kolaczki cookie until I met my husband. Every holiday season his mother makes these traditional polish cream cheese cookies and they are divine. His family is not Polish themselves, but his parents grew up on the south side of Chicago and these cookies were popular in the area.
In researching this cookie I learned that there are many different spellings including kolaczki, kolachky, kolachy, and kolacky. But however you spell it, the cookie starts with a cream cheese dough that is rolled out and filled with all kinds of fillings.

The dough requires very few ingredients
They taste like a fancy pastry, but are much easier to make!
One batch makes a lot of cookies- perfect for sharing or putting in a cookie tin!
The assembly process is best done with a crowd! Make them with kids or other friends and family!

Kolach Part 1 - Making the Dough
Apricot Kolaches | Hilah's Texas Kitchen

Ingredients:
- 1/2 cup whole milk
- 1/2 cup water
- 2 packages active dry yeast (1/2 ounce total)
- 3/4 cup soft butter
- 1/2 cup sugar
- 1 teaspoon salt
- 4 egg yolks
- 4 1/2 cups sifted all-purpose flour
- 2 tablespoons butter, melted
Filling:
- 12 ounces dried apricots (or other dried fruit)
- 2 cups water
- 2 tablespoons sugar (or more, to taste)
- 1/4 teaspoon grated nutmeg
Instructions:
Scald milk by heating in a small pot over medium-low heat for a couple minutes, stirring, until steam rises and tiny bubbles for around the edges. Remove from heat.
Add water and allow to cool to lukewarm (95-105ºF)
Stir in yeast to dissolve and set aside.
Cream butter, sugar, and salt together until smooth and fluffy. Mix in egg yolks.
Add in the yeast-milk mixture and half the flour. Beat on medium speed for 5 minutes.
Add the rest of the flour to form a firm dough. Cover and let rise until doubled.
Meanwhile, make the filling: Chop apricots and combine in a pot with water to cover them and sugar. Simmer 10 minutes until softened. Mash to form a chunky puree. Cool.
Once dough has risen, punch down and knead by hand on a floured surface for a couple of minutes. Divide into 24 balls.
Arrange balls 1 inch apart on a parchment-lined baking sheet. Brush with melted butter and cover. Let rise 45 minutes.
Preheat oven to 350F.
Press holes in the dough balls to fit a large spoonful of apricot filling and fill each with a couple tablespoons of apricot.
Bake 12-15 minutes until golden brown. Serve warm
Makes 24 delicious kolaches. mmmmmmm.....
