Beef Farfalle (Bowtie) Vegetable Winter Soup
INGREDIENTS:
1 pound cooked farfalle pasta
1 pound ground beef
8 cups beef broth - can use vegetable or chicken
1 cup diced onions
1 cup diced celery
1 cup diced red bell pepper
1 cup sliced carrots
1 - 28 oz can whole tomatoes
4 cups fresh baby spinach
salt and pepper
1 tsp minced garlic
1 tsp thyme
1 tsp marjoram
In a soup pot on med high add a couple tbsp olive oil.
Add onions, celery, red bell pepper, salt and pepper.
Stir and cook for 2-3 minutes.
Add carrots and cook for 2-3 more minutes.
Add minced garlic, thyme and marjoram. Stir and cook
for 1 minute.
Add ground beef, chop and cook for 5 -7 minutes until
browned.
Add can of tomatoes and chop up tomatoes with your
spoon as you stir. Cook for 2-3 minutes.
Slowly add in beef broth and bring up to a simmer.
Cook for 20-30 minutes.
Add spinach in slowly and in batches. It will wilt quickly.
Stir and cook for 10-15 more minutes.
Serve over farfalle pasta.
Serving tonite with pumpernickel bread.

1 lb Italian Sausage..
1 lb Bow Tie Pasta..
1 15oz Diced Tomatoes..
Small onion, bell pepper, 2 stalks of celery..
2 32oz Low sodium chicken broth..
Seasonings: Basil leaves, Black pepper, Umami, Salt, Italian seasoning..
Brown sausage in olive oil along with veggies and seasonings for 3-5 mins or until sausage is cooked.
Add diced tomatoes and chicken broth.. Stir together..
Add bow tie pasta while bringing temp up to a boil..
Once everything starts boiling reduce temp to medium..
Follow pasta directions for al dente. 10-12 mins..

EASY Italian Sausage White Bean Soup | One Pot Dinner
There's nothing better on a cold night than a hearty bowl of homemade soup. The classic combination of Sausage, Creamy White Cannellini Beans, and Escarole has never been so satisfying. This EASY Italian soup, typically known as Minestra alla Napoletana, is a quick, one-pot comforting soup that will become a family favorite. The sweetness from the Escarole, creaminess from the White Beans, and spiciness from the Sausage, this has all the classic Italian flavors for a warm and comforting meal.
Escarole, Sausage & White Bean Soup | Minestra alla Napoletana
Serves 4 - 6
2 Tablespoons Olive Oil (Only if you are using a lean meat like Turkey or Chicken)
1 lb Italian Sausage (sweet or hot)
½ Onion, diced
4 Garlic Cloves, minced
2 – 4 Roma Tomatoes, diced or 1 - 15 oz can Tomatoes, diced
1 15 oz can White Beans (Cannellini), drained and rinsed
1 head Escarole, trimmed and cut into 2-inch pieces
3-4 cups Chicken Broth, depending on the desired thickness of the soup
½ tsp Red Pepper Flakes
½ stick Butter
½ cup Parmigiano Cheese, grated
2 Tablespoons Parsley, chopped
Salt and Pepper to taste
1. Place olive oil (only if using lean meat) in a stockpot and heat. Once the oil is hot, sauté Sausage until brown, about 7 – 10 minutes.
2. Add Onions and Garlic and cook until garlic is almost golden in color, about 1 – 2 minutes.
3. Add Tomatoes and cook for 1 minute.
4. Add Beans and cook for 1 minute.
5. Add Escarole and cook until wilted, about 2 minutes.
6. Add Stock and Red Pepper Flakes and bring to a gentle boil.
7. Turn off heat and finish the soup by adding in Butter, Cheese, and Parsley.
8. Season with Salt and Pepper.
9. Ladle soup in a bowl, sprinkle with additional Parsley, Cheese and drizzle a good quality Extra Virgin Olive Oil on top.
