How To make Key Lime Cheesecake (8)
For the crust: 1 1/2 c Fine graham cracker crumbs
2 tb Sugar
1/4 c Unsalted butter, melted and
Cooled For the filling: 1 1/4 lb Cream cheese, softened
3/4 c Sugar
1 c Sour cream
3 tb All-purpose flour
3 lg Eggs
3/4 c Key lime juice
1 ts Vanilla
1 dr Green food coloring, if
Desired Whipped cream for garnish Lime slices, quartered for Garnish Mint sprigs for garnish Make the crust: In a bowl stir together the crumbs and the sugar and stir the butter in well. Pat the mixture evenly onto the bottom and 1/2 inch up the side of a buttered 10-inch springform pan and bake
the crust in the middle of a preheated 375F oven for 8 minutes. Transfer the pan to a rack and let the crust cool. In a bowl with an electric mixer, beat together the cream cheese and the sugar until the mixture is smooth; beat in the sour cream, the flour, the eggs, 1 at a time, beating well after each addition, the lime juice, the vanilla, and the food coloring, and beat the mixture until it is smooth. Pour the filling over the crust. Bake the cheesecake in the middle of a preheated 375F oven for 15 minutes, reduce the temperature to 250F, and bake the cheesecake for 50 to 55 minutes more, or until the center is barely set. (The cheesecake will continue to set as it cools.) Let the cheesecake cool on a rack and chill it, covered, overnight. Remove the cheesecake from the pan and transfer it to a cake stand. With a pastry bag fitted with a decorative tip, pipe the whipped cream into rosettes on the cheesecake. Garnish the cheesecake with the lime slices and the mint sprigs.

Will you believe me when I say that this raw vegan cheesecake tastes like the real thing? No, of course not. But it does! The texture is rich and velvety, and even a small slice is very satisfying. Vegan or not, cashew cream is beyond delicious.
The crust is delicious on its own as well. You can freeze this crust-free-filling for tons of different raw vegan desserts. Once you taste it, you'll be hooked. I have warned you.
I don't know if you can recreate any dessert using raw ingredients only, but cheesecake definitely does have a healthy raw version. I use cashews for the majority of my raw vegan cheesecake recipes because they have a rather neutral flavor and have a wonderfully smooth texture. Mixed together with a few other ingredients, the cashews mimic the taste and the texture of a cheesecake very well.

Mango Lime Cheesecake
Here is what you'll need!

MANGO LIME CHEESECAKE
Servings: 8-10
INGREDIENTS
Crust
8 digestive biscuits
1 tablespoon sugar
50 grams butter
Cheesecake
3 large mangos or 6 small yellow mangos, peeled & diced
900 grams cream cheese, at room temperature
225 grams, plus 2 tablespoons sugar
3 large eggs, at room temperature
2 egg yolks, at room temperature
Zest and juice of 2 limes
250 milliliters sour cream
PREPARATION
1. Preheat your oven to 190°C (375°F).
2. Place biscuits into a ziplock bag and crush using a rolling pin until crumbled.
3. Pour crumbs into a bowl, along with sugar and melted butter and mix until well combined.
4. Pour crust mix into a 9-inch springform cake pan. Use a measuring up to press into the base and partially up the sides. 5.Bake for 8-10 minutes, until lightly golden. Set aside to cool.
6. Using a blender, puree mangos until smooth. Set aside.
7. In a large bowl, whisk together cream cheese and sugar until smooth.
8. Add the eggs, 500 milliliters mango puree, and lime zest, whisking until combined.
9. Pour cheesecake filling into cooled crust. Lower oven to 160°C (325°F) bake for 1 hour.
10. Remove cheesecake from oven and allow to rest for 15 minutes. Centre will still by jiggly. Increase temperature to 190°C (375°F).
11. In a small bowl, combine sour cream, 1 tablespoon sugar, and lime juice. Spread the sweetened sour cream on top of the cheesecake.
12. Use remaining mango puree to decorate the top. Create your own pattern of dots, using a toothpick to swirl the pattern.
13. Return cheesecake to the oven and bake for an additional 20 minutes. Turn the oven off and allow the cheesecake to cool inside with the oven door cracked for 1 hour.
14. Cover the top of the pan with clingfilm and chill overnight in the fridge before serving. Enjoy!
