How To make Suzy's Lime Cheesecake
CRUST: 1 c Shredded coconut meat
2 tb Flour
2 tb Unsalted butter -- melted
FILLING: 1 Envelope unflavored gelatin
1/4 c Cold water
3 Egg yolks
3/4 c Water
3/4 c Granulated sugar
16 oz Cream Cheese - softened
1/4 c Lime juice
1 t Grated lime rind
Green food coloring
few Drops 1 c Heavy cream :
whipped
3 Egg whites *(Just Whites..
Equiv ) -- stiffly beaten
*A Note from Suzy: As we do not use RAW/UNcooked eggs here in the northeastern United States due to salmonella bacteria I have substituted a product called "Just Whites", it works just as well if not better than egg whites. CRUST: Combine coconut, flour and melted margarine. Press on bottom of a 9-inch springform pan. Bake at 350 degrees F. for 12-15 minutes until lightly
browned. Remove from oven and set aside. FILLING: Soften gelatin in 1/4 c. cold water. Set aside. In a saucepan combine egg yolks, 3.4 c. water 3.4 c. sugar. Stir over medium heat for 5 minutes.
Remove from heat and add softened gelatin and stir until dissolved. Beat cream cheese at low speed while gradually adding gelatin/ egg mixture until well blended. Stir in lime juice, grated lime, few drop green coloring. Fold in whipped cream and stiffly beaten egg whites. Pour filling over cooled crust and chill until firm. Remove from springform and garnish with grated lime rind. In summer decorate serving plate with fresh mint leaves if desired. From the recipe files of suzy@gannett.infi.net

This is my all time favourite dessert. It’s Key Lime Pie. Let’s try this gorgeous and delish no bake keylime pie made with cream cheese, condensed milk, fresh limes and whipped cream
For the crust
- 1 1/2 cup digestive biscuits (finely crushed)
- 6 tbsp melted butter (salted)
- 3 tbsp fine sugar
For the filling
- 250g cream cheese (room temperature)
- 392g/14oz condensed milk
- 1/3 cup key lime juice
- 1 tbsp lime zest
- 1/2 cup whipping cream (chilled)
- 1 tsp vanilla essence
Topping (optional)
- 3/4 cup (200ml) whipping cream
- 1/4 cup (25g) icing sugar
- 1/2 tsp vanilla essence
Pie pan
- 8 inch pie pan (can use any suitable pan)
Tbsp : Tablespoon
Tsp : Teaspoon

- 1/2 sdk esen vanila

Key Lime Pie Recipe | Easy, No Eggs
This refreshing Key lime pie is tart and sweet with the perfect creamy texture. Key lime pie is not only delicious but super easy to make.
Ingredients (Makes one 9-inch (23 cm) pie)
-Crust
Graham Crackers 12 whole crackers | 170 g
(About 1 ½ cups of crumbs)
Sugar ¼ cup | 50 g
Butter 6 Tablespoons | 84 g
-Filling
Sweetened Condensed Milk 28 oz | 794 g
Sour Cream ½ cup | 120 g
Lime Zest 1 tablespoon | 5 g
Lime Juice ¾ cup | 180 mL
-Whipped Cream Topping (Optional)
Heavy Cream ¾ cup | 180 mL
Powdered Sugar 3 tablespoons | 23 g
Directions
1. Crush crackers into fine crumbs. Combine graham cracker crumbs, sugar and melted butter until evenly moistened. Press mixture into bottom and sides of a greased 9-inch pie plate to form crust.
2. Bake crust in a preheated 350º F (178º C) oven for 8-10 minutes or until crust begins to brown. Cool while preparing the filling.
3. Combine sweetened condensed milk and sour cream; stir in lime juice and zest until incorporated and mixture thickens. Pour over cooled crust.
4. Bake in a preheated 350º F (178º C) oven for 10-12 minutes or until the filling is set with a slight jiggle in the center. Chill thoroughly.
5. To make the whipped cream, whip heavy cream and powdered sugar on medium speed until the mixture begins to thicken. Increase speed to high and continue whipping until medium peaks if spooning over pie or stiff peaks if piping decorations.
