How To make Justin Wilson's Hush Puppies
2 c Cornmeal 1 c Green onion, finely chopped
1 x Ground cayenne pepper 1/2 ts Soda
1 c Plain flour 2 tb Bacon drippings, hot
2 ea Eggs, beaten 1/2 c Parsley, finely chopped
1 ts Baking powder 1/2 ts Garlic powder (to taste)
1 c Buttermilk 1 x Deep fat for frying
1 ts Salt
Combine all dry ingredients. Add eggs, buttermilk, onions, and oil or bacon drippings. Mix well. Drop in deep hot fat by spoonfuls and brown on all sides. Now, I said above that this makes 48, I've never counted, so I don't know for sure. But it sure does make a bunch. The main reason why I said 48 is because the program, MenuMaster, won't let you past that field unless you tell it something. Justin Wilson says, "Hush puppy is an old Southern term that originated after the Civil War. People didn't have enough for themselves to eat let alone feed their dogs, so when the old hounds started barking from hunger, they would throw pieces of fried corn bread to them, yelling, 'Shut up, dog! Hush puppy!" -----

Homemade Simple and Delicious Hushpuppies Recipe
For those who may not know, hushpuppies are deep-fried cornmeal fritters which are traditionally served with seafood. The name comes from a possibly apocryphal tale involving tossing them to barking dogs during the cooking process, to get them to hush.
Our recipe is derived from an old classic recipe by Cajun cooking (and musical!) legend Justin Wilson. His are garnished just with chopped green onion; we choose to use corn kernels and chopped peppers for a little more zing.
Eat these fresh. They aren’t much good leftover, except maybe as part of a strata (which is a frittata made with bread).
Makes 16-20 hushpuppies.
Equipment:
• deep-fryer (or frying pot, or skillet w/ 1” of oil)
• large mixing bowl
• tablespoon (cutlery, for dropping hushpuppies into the hot oil)
• rack over a pan for draining fried hushpuppies
Ingredients:
1 cup cornmeal
1/2 cup AP flour
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/2 tsp garlic powder or 1-3 cloves smashed fresh garlic
1/2 tsp onion salt or powdered onion
1 ea egg
1 cup buttermilk
1/2 cup green onion minced (optional)
1 ear corn kernels sliced off
1/4 cup jalapeno or poblano; chopped fine
Procedure:
1. Allow the oil to come up to about 355F before starting, and try to maintain the oil around 350F while cooking.
2. In the large mixing bowl, combine all the dry ingredients thoroughly.
3. Make a well in the center of the dry ingredients, and add the egg there, and beat it a bit to break it up.
4. Add the buttermilk and any other non-dry ingredients, such as garnish and fresh garlic if it’s being used.
5. Mix the batter together pretty well; it’s okay if there are a few lumps.
6. Drop the batter by tablespoonfuls into the hot oil. Do not crowd the fryer/pan.
7. Allow the hushpuppies to fry 1-2 minutes, possibly turning them halfway, so that they become evenly golden brown.
8. Drain fried hushpuppies on the rack.
9. Dust fresh hushpuppies with a little salt, or Cajun seasoning, as you like.
10.Repeat until all the batter has been fried into hushpuppies.

HOMEMADE HUSH PUPPIES | EASY SIDE DISH RECIPE
Easy homemade hush puppies recipe.
Shopping List:
3/4 cup yellow corn meal
3/4 cup all purpose flour
1 1/2 tsp. baking powder
1 tbsp. sugar
1/2 tsp. Cajun seasoning
Pinch salt
2 tbsp. butter
1/4 tsp. parsley
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/2 cup shredded cheddar cheese
1 cup milk
1 large egg
3 cups cooking oil (canola or vegetable)
Directions:
In a bowl, mix together the corn meal, flour, baking powder, sugar Cajun seasoning, and salt.
In a separate bowl, mix together the milk and egg. Add to dry ingredients.
To room temperature butter, add the parsley, garlic and onion powder and mix then add to the dry and wet mixture. Mix until doughy.
Add oil to a high sided skillet and bring to 360F.
Add 1/4 cup of dough to the oil and cook until browned. Flip halfway through.
Serve and enjoy!
