HOW to make The BEST JAMAICAN BEEF PATTIES||SIMPLE, STEP BY STEP INSTRUCTIONS
In this video I show an easy to follow, step by step method on how to make the BEST Jamaican Beef Patties from scratch.
Recipe yields 8 Patties
Pastry:
2.5 Cups All Purpose Flour
1 Tbsp Turmeric
1 Tsp Curry Powder
1 Tsp Baking Powder
1 Tsp Sugar
1 Tsp Salt
3/4 Cup COLD Butter
4 Tbsp Cold Buttermilk
1 Cup Ice Cold Water
1/4 Cup Butter (Frozen) reserved for lamination
Filling:
500g Ground Beef
Fresh Seasoning:
2 Onions (1 for Browning meat)
3 Garlic
3 Scallion
1 Carrot
1 Scotch Bonnet (seeds removed depending on spice preference)
1/2 Green Pepper (optional)
Seasoning:
1Tbsp each:
Garlic Powder, Onion Powder, Curry Powder, All Purpose Seasoning, Paprika
1 Tsp All Spice & Thyme
2 Tbsp Browning
2 Tbsp Soya Sauce
1 Tbsp Ketchup (optional)
Panade:
3 pieces white bread (crust removed)
4 Tbsp Water or Milk
Directions:
Add Flour, Turmeric, Curry Powder, Baking Powder, Sugar and Salt to a bowl and mix.
Next add cubed pieces of Butter and cut with a pastry cutter or fork.
Once the Flour mixture resembles sand, you want to add your buttermilk and gradually add your ice cold water.
Slowly bring Ingredients together, using a fork or wooden spoon. You want to handle this dough as LITTLE as possible so as to not melt the butter.
Turn the dough out onto a floured surface and once a ball is formed, wrap in plastic wrap and place in fridge for 30 minutes.
Filling:
Take all ingredients listed under 'Fresh Seasoning' to a food processor and mix.
Meanwhile sautee one Onion and chopped garlic until fragrant.
Next add your ground beef and brown.
Once browned, add your Fresh Seasoning mix and all ingredients listed under 'Seasoning'.
While the ingredients for the filling are coming together, make your panade.
This is a very important step. The panade ensures the beef stays tender and doesn't leak out of your patty.
Combine the 3 pieces of bread and just enough water to cover in a food processor.
Pour the panade mixture over your beef mixture and stir until combined.
Pastry Lamination:
Remove pastry from fridge and turn out onto a well floured surface.
Using a rolling pin, roll out the pastry until it's 1/4 inch thick.
Next take your butter from the freezer and using a grater, grate 1/4 of the butter over the pastry, then fold over into itself.
Repeat this process at least 2 more times.
The more times you do this, the flakier your pastry will become once cooked.
Take care not to over handle the pastry.
Next, roll out one final time and using a bowl as a guide, cut 8 circles.
Take 1/4 Cup of your filling and place it on one half of the pastry. Then take a small amount of water and wet the edge of the meat side of the pastry.
Take the empty side of the pastry and fold over.
Next, using a fork, crimp and seal the edge of your patty.
Place patties on a lined baking sheet and bake at 375 for 30 minutes or until golden brown.
Let cool and enjoy!
Flaky Jamaican Chicken Patty Without Suet
Absolutely delicious and relatively easy. I overdid the veggies on this one but this was a great patty, the crust was milky rich and flaky unlike a suet crust which has a muted beef flavour. I filled this with a Curry Coconut Chicken filling which was exceptional. I love Jamaican patties so I will be making more...much MUCH more of them!

How to make Jamaican Beef Patties, flaky crust ????????
This homemade Jamaican Patty is so absolutely delicious, flaky tasty crust, simple instructions.

Green seasoning
**Patty Dough Crust **
3 cups all purpose flour
2 tsp baking powder
1 tsp turmeric powder
1/2 tsp curry powder
1 tbsp sugar
1 tsp salt
2 - 3 tbsp butter or Margarine
2 -3 tbsp vegetable shortening(Crisco or Cookeen)
3/4 cup cold milk or water
1 egg ( for egg wash)
**Beef Filling Ingredients **
1 1b ground beef
1 tsp salt
1 tbsp mix seasoning
1/2 tsp black pepper
1 tbsp green seasoning
1 small carrot (finely chopped)
1 small onion (finely chopped)
2 pimento pepper (chopped) (for flavor)
2 gloves garlic (chopped )
Scallion(chopped )
Fresh thyme (chopped)
Scotch bonnet pepper (chopped)
2 tbsp cooking oil
1 - 2 tbsp ketchup
1 tsp soy sauce
1/4 cup bread crumbs
MIX SEASONING: consist of
Paprika, Jerk Seasoning, Garlic & Herb, Onion Powder, (a bit of black pepper)and Dried Thyme
**Instructions**
Add flour, salt, turmeric powder, curry powder, sugar, baking powder, butter, and vegetables shortening to a mixing container and make a dough ball using cold milk or water. ( Do not over knead)
Cover dough with plastic wrap and put in refrigerator to sit for about 30 minutes
To a container, season ground beef with black pepper, salt, mix seasoning, and green seasoning.
Place a pot over low heat add cooking oil along with chopped carrots, onions, garlic, scotch bonnet pepper, scallion & thyme and pimento peppers, sautéed for a few minutes
Now add season ground beef to pot and mix everything together, crushing beef as you stir. When beef is no longer pink, add ketchup, soy sauce and bread crumbs, with 1/2 cup water, taste and add more flavor if needed.
Cover and allow to cook over low heat for a few minutes, until cook down into a nice gravy
Remove dough from refrigerator, dust a clean surface and roll dough out.
Add butter and shortening to dough, fold and roll. (Dust flour on if dough is sticking to rolling pin)
Roll dough flat out on the surface, cut into desire size and shape
Add 2-3 tablespoon full of beef filling to dough and seal the edges as shown in Video.
Beat an egg, gentle brush over patty crust.
Place on baking tray and bake at 400 degree Fahrenheit for 25 minutes
Serve and Enjoy!
