How To make Jamaican Rice & Peas
1 c Kidney beans (red), dry
Coconut milk (see note) 1 Thyme, sprigfresh
1 cl Gralic, crushed
1 Green onion, chopped
3 sl Hot Pepper
2 1/4 c Rice (uncooked)
Salt (to taste) In a medium saucepan with a tight-fitting lid, place the washed beans. Add the coconut milk and bring to boil. Reduce the heat. Cook until the beans are tender, 1 to 2 hours. Add the thyme, garlic, green onion, and salt. Add the hot pepper if desired. Simmer for a few minutes. Add the rice. The liquid should come up to 1-inch above the rice. Add water if needed. Cover the pot. Bring to a boil again. Reduce the heat to low. Cook for 15 minutes (for regular rice) to 20 minutes (for parboiled). It should not be necessary to add more water, but if to much liquid boils away, replace it with boiling water. The rice is ready when the liquid disappears and the grains of rice are separate. Stir just before serving to evenly distribute the red kidney beans. Makes 4 to 6 servings. NOTE: For coconut milk, crack 1 mature coconut with a hammer, cut off the brown shell, and grate the coconut meat. Into a bowl, add the coconut meat and 6 cups of water. Mix well, then squeeze to extract as much liquid as possible. Press through a sieve and use as directed above. Etoria says his preferred method to separate the coconut meat from the brown shell is with a butter knife ("or the dullest knife you have") to prevent cuts. Slip the knife between the white flesh and the shell, and it should come away easily.

Ingredients
- 2kg Oxtail
- 1 brown onion, finely diced
- 1 scotch bonnet chilli (or birds eye if you cant find a scotch bonnet)
- 1 tbsp of allspice
- 5 cloves garlic, minced
- 50ml soy sauce
- 2 tbsp brown sugar
- Thumb size piece ginger, finely grated
- 200ml water
- Small bunch thyme
- 2 spring onions, finely sliced
Method
1. Place all the ingredients except the water, brown sugar and spring onions into a bowl and leave the oxtails to marinate for 2 hours at least or overnight.
2. In a heavy base pot over med high heat, add a little oil and brown the oxtails on all sides.
3. Next add the brown sugar, water and leftover marinade.
4. Cook the oxtails with the lid on over a low heat for 2-3 hours. You want the meat tender but not so much it turns to mush.
5. Right at the end,add the spring onions.
6. Serve with rice and peas.

How to make Rice and Peas| Jamaican Style
Ingredients
1 1/2 cups red kidney beans( It’s better to soak the peas overnight). Cook peas for about 1 hour or until tender.
3 cups rice( Use your favorite rice)
2 cups homemade coconut milk( canned is optional)
Roughly 3 1/2 - 5 cups of water to cook peas ( cook peas until tender) Make sure to add enough water to cook peas and adjust where necessary.
1 small onion
4 garlic
3 stalk scallion
Few sprigs of thyme
1 tsp grated ginger
Few pimento berries
All purpose seasoning ( seasoned pot to taste) You can lightly seasoned peas with a pinched of salt or all purpose to cook peas) this will give the peas some taste as they cook and then do a final seasoning once the peas are cook and after adding the coconut milk and fresh seasoning. In addition you can always allow the peas to cook in its natural state with just the garlic, onion and thyme without adding any salt/ seasoning in the beginning and then seasoned to taste once the peas are cook and once you’ve added the remaining fresh seasoning and coconut milk.

Rice and Peas Recipe
Ingredients List

2 cups kidney beans soaked for 6-8 hours (overnight is better)
1-2 tsp salt adjust to preference
1 tbsp green seasoning
6 sprigs thyme for boiling beans + 4 later on when adding more seasonings to pot
3 spring onions
1 tbsp all purpose seasoning
2 scotch bonnet peppers
3 garlic cloves - (to boil with beans)
3 cups basmati rice - 4 1/2 cups (water/liquid in pot) - feel free to measure
1/2 can coconut milk/ cream
Important tips to remember
————————————————
* Always cook rice on a 1 cup rice to 1 & 1/2 cup liquid ratio.
* Allow beans to cook before adding any salt or seasonings to the pot as this lengthens the cook time and may cause you to season the pot twice.
* Always go for coconut milk with at least 60-70% coconut content as this will really help with the creamy taste of the rice.
* Cook beans on low heat to prevent water drying up quickly and the beans being undercooked. Steam rice on low heat as cooking too quickly will cause the pot to dry and the rice will still be uncooked.
* You may not master it in one go but practice makes permanent so keep trying even if it’s not perfect the first time around.
