1 c Mashed potato 2 c Flour 1 ts Salt 1 Tbpp baking powder 2 Beaten eggs 1 c Milk 4 tb Light corn syrup 1 tb Nutmeg Do not expect these to be like American pancakes, but they have an excellent flavor. Boxty Irish Potato Pancakes (great recipe for leftover mashed potatoes)
Boxty is a traditional Irish potato pancake that originates from County Mayo in Ireland. I understand many cultures have their own version of potato pancakes (I know there are at least three different versions of Korean potato pancakes I can think of). Boxty tastes like a hybrid of potato pancakes as we know here in the US and hash browns we also are accustomed to here in the States. It's made with a combination of raw grated potatoes and cooked mashed potatoes. Boxty is typically served with butter, but my kids love to eat them with sour cream.
Try my Authentic Irish Potato Farls recipe — my mum used to make them using leftover mashed potato and cook them off for breakfast as part of a traditional fry.
A potato Farl goes by many names! It's also known as potato fadge, potato cakes, griddle cakes, and boxty. It originated out of a way to use up leftover mashed potatoes from the dinner the night before. Made with cupboard staples, it's a humble recipe that might not seem like much but boy are they delicious.

Irish BOXTY recipe passed down to me by my FAKE Grandmother
There are lots of Irish Boxty recipes around - but this one, that was passed down to me by my non-existent Irish Nanna, is the best in my British, non Irish and therefore unqualified opinion. With a smooth creamy interior and a crispy outside, this Irish potato pancake is great for breakfast or any other time of day. It's a lot like a hash brown in a way but with more politics baked in. Especially if it's made by an Englishman. I'm not worried though because my fictitious Irish grandma would definitely approve of this recipe. Even if her stoic, unsentimental attitude would theoretically prevent her from showing it.
Irish Boxty full recipe:
600g peeled floury potatoes Salt to taste Generous dusting of pepper 50g melted butter plus spring onions if you like 50g all purpose flour
Cook in a generously oiled pan on medium for 5-7 minutes per side.
