How To make Hunan Style Salmon Chili
2 tablespoons Soy sauce
1 tablespoon Chinese oyster sauce
2 teaspoons Oriental chili paste
2 teaspoons Tomato paste
1 cup Clam juice
3 tablespoons Cornstarch
1/4 teaspoon Sugar
1 pound Salmonfilet,boned
skined
Cubed 2 tablespoons Chili powder
1/4 cup Peanut oil
1/2 Lemon :
for juice
2 Scallions chopped
20 milliliters Garlic :
minced
1 Inch ginger root minced
1/2 cup Pumpkin seeds -- toasted
4 cups Hot cooked rice
In a bowl,whisk together the soy sauce,oyster sauce,chili paste,tomato paste,clam juice,2 tsp.of the cornstarch,the sugar,and lemon juice.Set aside.. Toss the salmon in the remaining cornstarch mixed with the chili powder.Heat a large wok until smoking.Add the peanut oil and gently stir fry the salmon,in 2 batches,until its surface is lightly browned and crisp,about 2 minutes.Remove the salmon with a slotted spoon to a strainer or colander to drai.Pour off all but a thin film of the oil. Add the scallions,garlic and ginger root and stir fry 10 seconds.Return the salmon,add the reserved liquid and simmer until lightly thickened.Toss in the pumpkin seeds.Serve over rice.Makes 4 servings...

How to make roasted Sea bass whole fish- Spicy Sichuan Style Recipe

This is really an easy simply dish to make. You can try different vegetable every time.And also you can use almost any whole fish. This time I have a whole sea bass from @coastalseafoodsmn My favorite place in the twin cites to get sea food.

Ingredients:
Whole fish
Salt and pepper
Cooking wine
2 tbs[p cooking wine(Shaoxin wine)
Sliced Ginger
Lotus Roots
Dried or fresh mushrooms
2 Green onions
3 tbsp Douban (Sichuan Fermented broad bean chili paste)
5 Cloves of garlic
1 tsp Sichuan peppercorn powder
1 tsp Cumin
1 bottle of Beer
2 tbsp Soy Sauce
1 tbsp Vinegar
Steps:
1. Score the fish on both side, put ginger inside. Marinate the fish with salt and pepper, cooking wine for 20 minutes.
2. Prepare all the vegetables, blanching them for 3 minutes. Set on the side.
3. 3 tbsp cooking oil(I use canola oil), brown the fish on both side. The trick fish is not to stick on the wok, is to heat the oil on high heat, then let the oil cool down on lower temperature then put the fish in. After browning the fish, put the fish on the side
4. Add 3 tbsp of Douban, stir-fry until see the red oil. Add green onions and garlic, Sichuan peppercorn powder and cumin powder. Stir fry until fragrant. Add a bottle of beer. Then add soy sauce and vinegar.
5. Arrange the vegetable on the bottom of the pan, place fish on then pour the sauce over the dish. Cover with aluminum foil. Bake 350 for about 20 minutes.
