How To make Hunan Style Salmon Chili
2 tablespoons Soy sauce
1 tablespoon Chinese oyster sauce
2 teaspoons Oriental chili paste
2 teaspoons Tomato paste
1 cup Clam juice
3 tablespoons Cornstarch
1/4 teaspoon Sugar
1 pound Salmonfilet,boned
skined
Cubed 2 tablespoons Chili powder
1/4 cup Peanut oil
1/2 Lemon :
for juice
2 Scallions chopped
20 milliliters Garlic :
minced
1 Inch ginger root minced
1/2 cup Pumpkin seeds -- toasted
4 cups Hot cooked rice
In a bowl,whisk together the soy sauce,oyster sauce,chili paste,tomato paste,clam juice,2 tsp.of the cornstarch,the sugar,and lemon juice.Set aside.. Toss the salmon in the remaining cornstarch mixed with the chili powder.Heat a large wok until smoking.Add the peanut oil and gently stir fry the salmon,in 2 batches,until its surface is lightly browned and crisp,about 2 minutes.Remove the salmon with a slotted spoon to a strainer or colander to drai.Pour off all but a thin film of the oil. Add the scallions,garlic and ginger root and stir fry 10 seconds.Return the salmon,add the reserved liquid and simmer until lightly thickened.Toss in the pumpkin seeds.Serve over rice.Makes 4 servings...

Shui Zhu Yu (水煮鱼) is one of our favourite Sichuan food. It is spicy, numbing, and savoury, a perfect dish for rainy days. Here's our recipe for how to make Shui Zhu Yu at home.
Shui Zhu literally translates to water boiling, which comes from the fact that the dish is finished by pouring boiling hot oil over a pile of garlic, chilies, and spices. Shui Zhu actually refers to a family of dishes that share the characteristics of numbing, spicy, umami, and served piping hot. These dishes are a perfect match with bowls of steamed rice.

Additional Notes
1: Some chefs, especially at restaurants, skip cooking the ginger and scallions. Instead, they heat the oil and pour it on top of the raw, minced ginger and scallions. This results in a more pungent taste (which some people prefer), but my dad prefers cooking everything because it lasts much longer in the refrigerator.
2: This is an updated excerpt from our longer Bak Chit Gai video ( from our Lunar New Year series!) Ginger Scallion Sauce is a great recipe on its own, so I figured it deserves its own video.

STEAMED FISH HEAD with Chopped Peppers 剁椒鱼头 (Duo Jiao Yu Tou)
Mama Liu's recipe for Steamed Fish Head with Chopped Peppers 剁椒鱼头 (Duo Jiao Yu Tou). The fish head casserole is one of the most famous and popular dishes in Hunan cuisine.
Ingredients
- 1 salmon fish head
- 1 cup chopped red pepper (salted red pepper)
- 2 tbsp or more minced garlic
- Sliced ginger
- ½ cup chopped green onion / ½ cup non chopped green onion
- 1.5 tbsp salt
- 5 tbsp oil
- 1 tbsp sugar
- 1tsp white pepper
- 1 tsp oyster sauce
- 2 tbsp cooking wine
Directions
- Chop green onion and garlic
- Wash and clean fish head
- Marinate fish head with green onion/sliced ginger / 1tsp salt / 1/2tsp white pepper / 2tbsp cooking wine about 15 minutes leaved on side, ready for use.
- Make red pepper garlic sauce - 3 tbsp oil into the wok, then oil hot add garlic, add red pepper, put ½ tsp salt/ 1 tsp sugar/ 1/2 tsp white pepper/ 1 tsp oyster sauce, mix well, cook ~2 minutes, pour in bowl, ready for use.
- Steam fish head with green onion and ginger at the bottom and red pepper garlic sauce on top for about 15 minutes.
- Add green onion on top of fish head, and pour leftover oil on top
Stir-fried green chili peppers (Gochu-bokkeum: 고추볶음)
Gochu-bokkeum (stir-fried shishito peppers) are a super fast and easy-to-make side dish that can be ready in just 6 minutes!

●1/4 cup low sodium soy sauce
●1/4 cup chinese rice wine
●1 tablespoon minced ginger
●2 teaspoons sugar or 2 teaspoons Splenda sugar substitute
●1 1/4 lbs fresh salmon fillets , cut crosswise into 1- inch wide pieces
●1/2 cup packed brown sugar
●1/3 cup uncooked long-grain rice
●1/4 cup oolong tea or 1/4 cup black tea leaves
●2 whole star anise
●1 cinnamon stick
●2 teaspoons whole black peppercorns
●1 teaspoon whole white peppercorns
●1/2 teaspoon cornstarch , dissolved in
●2 teaspoons water
