1 Spaghetti squash
The flesh of spaghetti squash, when cooked, comes out like strands of cooked spaghetti and makes a great light stand-in for pasta lovers. Prepare squash by cutting in half lengthwise and removing seeds. Pierce skin several times with a fork and follow one of the cooking methods below. To bake, prepare squash, and place, cut side down, in a large baking pan. Bake at 350 oF for 45 minutes or until skin is tender and strands may be loosened easily with a fork. To microwave, prepare squash, and place, cut side down, in a baking dish. Add 1/4 cup water; cover with plastic wrap, folding back a small edge of wrap to allow steam to escape. Cook on HIGH 7 to 10 minutes. To boil, prepare squash, and place, cut side down, in a Dutch oven, add water to a depth of 2 inches. Bring to a boil; cover, reduce heat, and simmer 20 to 25 minutes or until tender. Drain. Cool cooked squash. Using a fork, remove spaghetti-like strands of pulp. Discard shell. Yield: 1 medium spaghetti squash equals about 4 cups cooked. June, 94 issue of Southern Living. RECIPE:
First for the spaghetti squash, poke 15 holes in the squash. Microwave 4 minutes per pound, flipping over halfway through. Now that you've got your spaghetti base.
RECIPES FOR SAUCES:
Veggie Sauce-
1/2 cup chopped zucchini
1/2 tomato, chopped
1/4 cup onion, chopped
1/2 tsp salt
1/4 tsp pepper
1 Tbsp. olive oil
2 cups cooked spaghetti squash, hot
Microwave all ingredients together for 4 minutes. Add spaghetti squash. Top with parmesan.
Alfredo-
1/2 Tbsp. butter
2 Tbsp. whole milk
1/4 cup shredded parmesan
2 cups cooked spaghetti squash, hot
Combine all ingredients with warm spaghetti squash. Top with a sprinkle of additional parmesan.
Pesto-
2 Tbsp. pesto
1 Tbsp. olive oil
2 cups cooked spaghetti squash, hot
Combine all ingredients, and top with shredded mozzarella.

The Best Way to Cook Spaghetti Squash
Sharing the best way to cut and cook spaghetti squash if you want long pasta-like strands and spaghetti squash that isn’t watery! Just cut the squash widthwise, into rings and roast it.
HOW TO COOK SPAGHETTI SQUASH RECIPE:
1 large spaghetti squash
1–2 teaspoons olive oil
sea salt and pepper
Instructions
1. Preheat your oven to 400°F. Slice ends off the squash, then cut widthwise into halves or rings. If you cut the squash into rings, try to make the rings about the same size, around 1-1/2 inches.
Use a spoon to scrape out the seeds. (I love using a grapefruit spoon for this.)
2. Place squash on rimmed baking sheet. Use hands to coat each ring with a little olive oil, salt and pepper.
3. Bake for 30-40 minutes, flipping rings once about 15 minutes in.
4. Allow to cool for about 15 minutes, then peel the skin away and separate the strands into long spaghetti noodles using a fork.
