SENPAI'S FRIED CHICKEN:
BRINE:
8 Boneless Chicken Thighs (skin on preferably)
4c butter milk
1 whole lemon (juiced but use the whole thing)
6tbs ap flour
3tbs garlic powder
3tbs onion powder
3tbs paprika
6tbs cayenne pepper
1.5tbs black pepper
2tbs MAGIC
1/4c fresh rosemary
CHICKEN DREDGE:
2.5c all purpose flour
1c corn starch
1tbs MAGIC
MAGIC SEASONING
1/2c salt
2tbs sugar
2tbs MSG
HOT CHILI OIL:
4oz Tiianjin Chiles (or korean chili flakes)
Use Cayenne is you like it really spicy
3tbs Szechuan peppercorns (toasted/ground)
1.5tbs magic
2tsp sugar
2c frying oil
- brine chicken overnight (16+ hours)
- drain off a little of the batter then go straight into the dredge, pressing it in
- fry at 300 for 4-5 minutes
- rest for at least 10 minutes
- then fry again at 30 for 3-4 minutes

Ingredients
FOR CHICKEN
2 lbs of chicken wings
4 teaspoons of vegetable oil
¼ teaspoon of garlic powder
¼ teaspoon of cayenne pepper
2 tablespoons of baking powder
FOR SWEET & SPICY SAUCE
½ cup of hot sauce
1 cup of brown sugar
3 tablespoons of butter
1 Tbsp of soy sauce
1 Tbsp of white vinegar
½ teaspoon of red pepper flakes
FOR SERVING
Celery sticks
Blue Cheese Dressing
Directions
Cut your chicken wings. Use your finger to find the ridge at the ends (joints) of the pieces of wings. Cut right next to where the ridge is. Discard the tips (or keep to make chicken stock) and keep the flats (wingettes) and drumettes.
Wash your chicken and pat dry with a paper towel.
Put your chicken wings in a bowl and toss them with: vegetable oil, garlic powder, cayenne pepper, and baking powder.
Place your wings on a wire rack over a foil-lined baking sheet, and bake in a 400° oven for 30 minutes.
After 30 minutes take the wings out and flip them over. Then bake an additional 30 minutes.
For your sauce, in a small saucepan add hot sauce, soy sauce, brown sugar, white vinegar, and red pepper flakes. Whisk it occasionally and bring it to a simmer. Add butter, and let it simmer until the butter is melted (approximately 2-3 minutes).
In a large bowl toss together your wings and sauce. Toss them gently so you don’t tear the skin on your wings.
Place the wings back on the wire rack, then place them in the oven to broil for 3-5 minutes on low to let the sauce caramelize. Keep a watch on them to make sure they don’t burn.
Take your wings out. Then serve with dipping sauce and celery optional.

-Dahi (Yogurt) 3 tbs
-Adrak lehsan paste (Ginger garlic paste) ½ tbs
-Lal mirch powder (Red chili powder) ½ tbs or to taste
-Namak (Salt) ½ tsp or to taste
-Dhania powder (Coriander powder) 1 tsp
-Zeera powder (Cumin powder) ½ tsp
-Haldee powder (Turmeric powder) ½ tsp
-Garam masala powder ¼ tsp
-Javitri powder (Mace powder) 1 pinch
-Jaifil powder (Nutmeg powder) 1 pinch
-Zarda ka rang (Yellow food color) ¼ tsp
-Lemon juice 1 tbs
-Chicken wings (with skin) ½ kg
-Oil 2 tbs
-Pani (Water) if required
Directions:
-In bowl,add yogurt,ginger garlic paste,red chili powder,salt,coriander powder,cumin powder,turmeric powder,garam masala powder,mace powder,nutmeg powder,yellow food color,lemon juice and mix well.
-Add chicken wings,mix well and marinate for 3-4 hours.
-In frying pan,add oil and marinated chicken wings,fry from both sides.
-Add water,cover and cook on low flame until chicken is done.
-Serve with green raita.

-Frying pan mein oil aur marinated chicken wings dal ker dono sides sa fry ker lein.
-Pani dal ker dhak dein aur halki ancch per chicken gul janay tak paka lein.
-Green raita ka saath serve karein.

This buffalo wings recipe is a Pinoy version because it uses banana ketchup, calamansi juice instead of lemon juice but you can use lemon juice as an alternative.

The original taste of buffalo chicken wings is not sweet and taste more of hot sauce with butter. This this version I'm sure you are going to love the taste sweet and spicy with buttery taste.
Buffalo Chicken Wings Ingredients
800 grams chicken wings, slice in two pieces each
1 tsp. Magic Sarap or any granuled seasoning
1/2 tsp. salt
1/2 tsp. pepper
1 Tbsp. calamansi juice (for fried chicken marinade)
3 cups cooking oil for frying
Cornstarch for coating the chicken
For the sauce:
3 cloves garlic, minced
1/4 cup butter or margarine
1/4 cup hot sauce (reduce to 1/8 cup if too spicy)
1/2 cup banana ketchup
1 Tbsp. calamansi juice (for the sauce)
