Mauritian Cuisine : Chicken Salmi & Chayote
Mauritian cuisine is one of the most unique cuisines in the world since it's a mixture of Indian, French, English and African cuisines. In my channel, I will be showing you how to make some of my favorite cuisines and also some of my favorite Mauritian cuisines. When it comes to the Chayote, I came to eat this vegetable for the first time when I came to Mauritius. Coming from Kenya I had never seen this kind of vegetable but I always used to see people asking how to cook them in some of the cooking pages on Facebook. I came discover that there are so many fun ways of making this vegetable delicious. I will continue showing you how to make different kind of dishes from this beautiful vegetable. For the recipe we just made , this is a very easy recipe that you can make. You can as well make your own chicken salmi spice and add the amount of chili you would like. Enjoy this recipe with your friends and family and let me hear your feedback on the comment section.
Chicken Salmi Ingredients
1. Whole chicken ( Kienyeji, Ex layer)
2. 2 large onions
3. 4 sliced tomatoes
4. Garlic
5. Ginger
6. Curry Leaves
7. Thyme
8. Coriander
9. Green Onion
10. Salmi spice(cinnamon, cloves, star anise, black pepper, garlic, ginger & chili)
Marination
1. Sweet and Spicy wine
2. Salmi spice
3. Garlic & ginger
4. Black pepper
5. Salt
- Don't pour your marination after removing the chicken.
Procedure
1. Heat your pan and add oil.
2. Put your chicken inside and seal it until brown.
3. Remove the chicken and put in the pressure cooker and pressure cook for 10 minutes (don't pour the broth from the chicken)
4. In another pot add some oil and add onions, curry leaves, thyme and let it cook until onions are brown.
5. Add the chopped garlic and ginger and let it cook.
6. Add the salmi spice and let it cook for about 1 minutes.
7. Add the tomatoes and let them cook for 5 minutes
8. Add the chicken broth and the marination and let it cook for 5 minutes.
9. Check your seasoning and if it's not enough add some more.
10. Add your chicken in the sauce and let it cook for another 15 minutes on low heat.
11. Switch off your heat and add coriander and green onion.
Chayote(Chuchu)
1. Methi seeds(Fenugreek seeds)
2. Cumin Seeds
3. 2 chopped onions
4. Chopped garlic
5. 2 cubes chayote
6. 2 bunches of chayote leaves
Procedure
1. Heat your pan and add oil
2. Add the methi seeds and cumin seeds and let them crack.
3. Add onions and let them cook until soft and add some salt.
4. Add the garlic in and let it cook.
5. Add the cubed chayote and let it fry for a minute then add some water and salt.
6. Let the chayote cook for about 8 to 10 minutes.
7. After add the chayote leaves and add a little bit of water and a little salt and cover it for 5 minutes then switch off.
