GLASS NOODLE SALAD | FRESH & EASY Meal in 20 Minutes. Recipe by Always Yummy!
Very tasty glass noodle salad is well known in Asian countries. There is a variety of such salad recipes – with fried chicken, beef, rice or other glass noodles. Here is a video recipe of glass noodles with vegetables.

✅ Ingredients:
• glass noodles – 7 oz | 200 g
• carrot – 7 oz | 200 g
• bell pepper –7 oz | 200 g
• fresh cucumber – 7 oz | 200 g
• garlic – 3 cloves
• fresh cilantro – 1 oz | 20 g
• soy sauce – 6 tbsp
• vinegar 9% - 3 tbsp
• vegetable oil – 2 tbsp
• sesame oil – 1 tbsp
• sugar – 1 tbsp
• ground coriander – 1 tsp
• red chili flakes – to taste
• sesame seeds – to taste
✔︎ You will need:
• carving board
• deep salad bowl
• colander
• bowl
???? Preparation:
1. Pour the glass noodles with boiling water for 7 minutes or cook as indicated on package instruction.
2. Prepare vegetables: grate the carrot with a korean carrot grater, cut the cucumbers and bell pepper into thin strips.
3. In a bowl combine the chopped up garlic, sugar, ground coriander, chili flakes, soy sauce, vinegar, vegetables and sesame oils.
4. Pour away the water and wash the noodles with cold water, drain in a colander.
5. Into a deep salad bowl lay out the glass noodles, grated carrot, cut cucumber and bell pepper, cilantro leaves, sesame seeds and the prepared sauce. Combine well and leave for 1-3 hours.
6. Serve your glass noodles with vegetables sprinkled with sesame seeds, cilantro leaves or chili rings.

Below is the detailed recipe with ingredients.
STREET / RESTAURANT STYLE ASIAN MUNG BEAN Glass noodles
CARBONSTEEL WOK GIVES THE BESTEST RESTAURANT OR STREET STYLE COOKING AND INFUSE FLAVORS BETTER.
Ingredients
Tapioca / mung bean starch noodles 1 pkt with 4 rolls (soaked them in hot water to soften and not actually super soft. Then drained the water and covered it with lid. I run my pizza cutter/wheel twice to make the stir frying easy that leaves the noodles evenly spiced
Oil I actually use very less oil
Mung sprouts half box or almost a cup
1 medium onions
1 bunch spring onions
1 box tofu (drained, chopped into cubes and air fried for 5 min each side flipped at 350 degrees
2 carrots sliced
1 Bell pepper sliced into fine pieces
5 eggs scrambled with salt (optional)
Baby corn (optional)
Cabbage 1/4th French cut
Cauliflower 1/4th French cut
Broccoli 1/4th French cut
Minced fresh garlic 4-10 cloves minced
Ginger 1/2 inch minced
Curry powder adjust according to your taste
Black pepper powder adjust according to your taste
Soy sauce adjust according to your taste
Salt adjust according to your taste
Stir fry all the veggies on high heat with some salt, curry powder and black pepper.
I then add the noodles topped with some salt, curry powder, black pepper powder and soy sauce. I add my chili flakes (Thai or chinese store bought as they have special flavor) if your kids can handle the spice levels. I added very little flakes while make this as I have two little kids.
I toss them well on medium to high flame until every noodle is covered with the spices. Then I add air fried tofu and scrambled egg(optional) and mix them up adding additional soy sauce, curry powder and pepper powder according to our taste. Mix them well and I top it with spring onions and turn off stove. Noodles turn out glassy and well cooked during the cooking process. So DONOT OVER COOK THEM WHEN YOU ARE SOFTENING THE NOODLES INITIALLY. That is very important.
