How To make Korean Bean Thread Sesame Noodles with Vegetables
1 oz Chinese dried mushrooms
1/2 oz Chinese dried cloud ears
1/4 lb Bean thread noodles
2 oz Carrot
1 Green pepper
1 sm Onion
2 tb Peanut oil
1/2 c Water
SAUCE:
2 tb Light soy sauce
2 tb Dark soy sauce
3 tb Sesame oil
1 1/2 tb Sesame seeds
1 tb Finely chopped garlic
1 tb Sugar
1 ts Freshly ground black pepper
Soak the dried mushrooms in warm water for 20 minutes until soft. Squeeze the excess liquid from the mushrooms and remove and discard the stalks. Cut the caps into shreds. Soak the cloud ears in warm water for about 20 minutes or until soft. Rince them well in cold water and drain them thoroughly in a colander. Soak the noodles in a large bowl of very hot water for 15 minutes. When soft, drain well. Cut the noodles into 3-inch lengths, using scissors or a knife. Peel and finely shred the carrot. Finely shred the pepper and onion. Heat a wok or large frying pan and add the oil. When moderately hot, add the mushrooms, cloud ears, carrot, onion, green pepper, and water and stir-fry for 5 minutes or until the carrots are cooked. Combine the sauce ingredients and add them to the vegetables. Give the mixture a good stir, then add the noodles. Stir-fry the mixture for 2 minutes until well heated through. Vegetarian Japchae - Korean Glass Noodle Stir-fry
Who doesn’t love bouncy glass noodles coated with a savory and slightly sweet sauce paired with colorful vegetables that are addicting AND refreshing? Today, we are finishing my Korean drama series strong with one of the most classic and popular Korean Dish ever, Japchae - Korean Glass Noodle Stir-fry. We are making a vegetarian version, but you can also add any protein of your choice, such as beef, pork, or chicken. Japchae is easy to make at home, super versatile and requires only a few simple ingredients. I will be sharing how to make my homemade Japchae sauce which is a perfect balance between savory and sweet!
The “Reply series” is one of my favorite Korean drama series on Netflix and one of the first series I ever got addicted to. I love that you get to connect and learn every single character’s story on the show and their friendship and love feel genius and relatable. One of my favorite quotes in life is from this show “Believing in my past choices without regret and loving them - that is the right answer, and that’s how to grow old with style.” Warning, the storyline is relatively slow, so I recommend it mainly to those that have alot of time to commit to the drama.
FULL RECIPE:
EASY Japchae Korean Glass Noodles #shorts
RECIPE:
• 200 g sweet potato vermicelli noodles
• 1/2 lb. lean beef (I’m using sirloin)
• 1/2 small onion, julienned
• 1/2 carrot, julienned
• 1 bell pepper, julienned
• 5-6 shiitake mushrooms, julienned
• 6 cups spinach
• Salt to taste
• 1 tbsp. sesame oil
• Garnish toasted sesame seeds
SAUCE MARINADE:
• 4 tbsp. soy sauce
• 1.5 tbsp. sugar
• 2 tbsp. sesame oil
• 2 tsp. minced garlic

Very tasty glass noodle salad is well known in Asian countries. There is a variety of such salad recipes – with fried chicken, beef, rice or other glass noodles. Here is a video recipe of glass noodles with vegetables.

✅ Ingredients:
• glass noodles – 7 oz | 200 g
• carrot – 7 oz | 200 g
• bell pepper –7 oz | 200 g
• fresh cucumber – 7 oz | 200 g
• garlic – 3 cloves
• fresh cilantro – 1 oz | 20 g
• soy sauce – 6 tbsp
• vinegar 9% - 3 tbsp
• vegetable oil – 2 tbsp
• sesame oil – 1 tbsp
• sugar – 1 tbsp
• ground coriander – 1 tsp
• red chili flakes – to taste
• sesame seeds – to taste
✔︎ You will need:
• carving board
• deep salad bowl
• colander
• bowl
???? Preparation:
1. Pour the glass noodles with boiling water for 7 minutes or cook as indicated on package instruction.
2. Prepare vegetables: grate the carrot with a korean carrot grater, cut the cucumbers and bell pepper into thin strips.
3. In a bowl combine the chopped up garlic, sugar, ground coriander, chili flakes, soy sauce, vinegar, vegetables and sesame oils.
4. Pour away the water and wash the noodles with cold water, drain in a colander.
5. Into a deep salad bowl lay out the glass noodles, grated carrot, cut cucumber and bell pepper, cilantro leaves, sesame seeds and the prepared sauce. Combine well and leave for 1-3 hours.
6. Serve your glass noodles with vegetables sprinkled with sesame seeds, cilantro leaves or chili rings.
❗️Advices:
1. Use fresh vegetables for glass noodles salad.
