How To make Korean Bean Thread Sesame Noodles with Vegetables
1 oz Chinese dried mushrooms
1/2 oz Chinese dried cloud ears
1/4 lb Bean thread noodles
2 oz Carrot
1 Green pepper
1 sm Onion
2 tb Peanut oil
1/2 c Water
SAUCE:
2 tb Light soy sauce
2 tb Dark soy sauce
3 tb Sesame oil
1 1/2 tb Sesame seeds
1 tb Finely chopped garlic
1 tb Sugar
1 ts Freshly ground black pepper
Soak the dried mushrooms in warm water for 20 minutes until soft. Squeeze the excess liquid from the mushrooms and remove and discard the stalks. Cut the caps into shreds. Soak the cloud ears in warm water for about 20 minutes or until soft. Rince them well in cold water and drain them thoroughly in a colander. Soak the noodles in a large bowl of very hot water for 15 minutes. When soft, drain well. Cut the noodles into 3-inch lengths, using scissors or a knife. Peel and finely shred the carrot. Finely shred the pepper and onion. Heat a wok or large frying pan and add the oil. When moderately hot, add the mushrooms, cloud ears, carrot, onion, green pepper, and water and stir-fry for 5 minutes or until the carrots are cooked. Combine the sauce ingredients and add them to the vegetables. Give the mixture a good stir, then add the noodles. Stir-fry the mixture for 2 minutes until well heated through. Japchae: The Sweet & Savory Noodle Recipe!!!
Japchae is a savory and slightly sweet dish of stir-fried glass noodles and vegetables that is popular in Korean cuisine
So delicious !!!
Recipe:
Ingredients
4 oz beef
3 dried shiitake mushrooms
2 garlic cloves
2 tbsp sugar
3 tbsp soy sauce
2 tbsp toasted sesame oil
1 tbsp toasted sesame seeds
2 egg yolks
4 oz spinach
4 oz potato starch noodles
3 green onions
1 onion
5 mushrooms
1 carrot
1/2 bell pepper
black pepper
salt
Soak shiitake in hot water for 30 minutes. Then marinade them with beef and 1 clove garlic, 1 tsp sugar, 1/4 tsp black pepper, 2 tsp soy sauce, and 1 tsp toasted sesame oil. Prepare all veggies. Then cook spinach for 30 sec. Put in cold water, strain and add to a big bowl. Mix with 1tsp sesame oil plus 1tsp soy sauce. Cook noodles in the same pot. Strain. Add them to a bowl and mix with 2tbsp sesame oil, 1 tsp sugar, 1 tsp soy sauce. Fry onions and green onions about 2 minutes. Put to a bowl then mushrooms 2-3 minutes, transfer to a bowl. Carrot-1 minute, add bell pepper and fry 1 more minute. Cook beef for 3-4 minutes. Cook egg yolks and cut into strips. At the end add fresh garlic and sesame oil- soy sauce mix to taste. Mix and serve.
