I M P O R T A N T ⚠️
Add more Chile serranos if you want your pozole to be more spicy the green hatch chiles are a little spicy you can replace for Anaheim peppers, Anaheim pepper are not spicy at all
Ingredients:
4-6qt water
4-5 lbs chicken
4 bay leaves
1/2 white onion
7 garlic cloves
110 oz precooked hominy
Salt I used 3 1/2 tbsp
Green sauce:
5 large hatch green chiles
2 chile poblanos
14 tomatillos
1/2 white onion
4 garlic cloves
Chile serranos I used 5
1/2 cilantro
5 lettuce leaves
3 oz spinach
Radish leaves
1 tsp cumin seeds
1 tsp peppercorn
1 tsp oregano
1/2 tsp thyme
1/2 tsp marjoram
2 tbsp chicken bouillon
Cucumber sauce:
Fry 4 tomatillos
1 garlic clove
1 serrano
Chile árbol I used 15
1/4 cup water
1 medium cucumber
Handful of cilantro
1/4 purple onion
2-3 limes
Salt I used 2 tsp

How to make The BEST Mexican Vegan POZOLE
Hello & welcome to the Views Kitchen! Today I’ll be showing you how to prepare an unforgettable vegan pozole rojo. I have a few tips and trick when using soy meat and also combining seasonings the provide all the texture comforts and flavors, that we love from pozole. Ingredients
5 cups water + extra for boiling chilis and soy (Total water needed 13 cups water)
8 to 10 guajillo chiles
2 1/2 cups white or yellow hominy
1 cup soy meat/soy curls
4 bay leaves
1 Tbsp Mexican Oregano
1/2 medium white or yellow onion + 1/2 chopped onion
1 small garlic bulb (6 to 8 garlic cloves)
5 Tbs bouillon of choice (See tip below and end of the video)
Topping options- chopped cabbage, lettuce, cilantro, pepper flakes, or lemon
Bouillon TIP
*I used a blend of 3 Tbsp “Lee Brand vegetable broth mix” & 2 Tbsp “Orrington Farms broth base & seasoning” for BEST flavor
-I recommend combining your favorite veggie seasonings and make it comfortable for your home
-veggie broth seasonings will require 1 Tbsp per 1 cup water (Please adjust as needed)
-taste broth after 15 minutes of boiling, adjust veggie broth seasoning 1/2 Tbsp at a time, and continue to boil until you achieve desired flavor.
-Once you achieve the desired flavor add soy+ Mexican oregano
-Boil chilis in 4 cups hot water till soft (8 mins)- save 1 cup chili water for blending
-Boil soy meat in 4 cups hot water for 4 mins

QUICK + EASY TEX-MEX Mexican Style Soup Recipe!
Learn how to make an incredible spicy vegan Mexican soup in just literally minutes!
LAY HO MA!! This recipe is going to be a lifesaver for the days where you just can't be bothered. This spicy Mexican soup is fast, simple, and absolutely packed with flavour. Join me in this episode and learn how to make my version of a spicy vegan Mexican soup.
Ingredients:
1/2 red onion
2 pieces garlic
1 scotch bonnet (optional! very spicy!)
2-3 tbsp olive oil
1/2 tbsp cumin
1 1/2 tbsp smoked paprika
1/2 tbsp chili powder
2 tbsp dried oregano
1 800ml can peeled tomatoes
1 can black beans
2 cups corn
6 cups water or vegetable stock (plus 1 tbsp pink salt if using water)
3 tbsp tomato paste
2 tbsp cane sugar
1 avocado
1 small bunch cilantro
few tortilla chips
Directions:
1. Dice the red onion and garlic
2. Remove the seeds from the scotch bonnet and finely chop
3. Heat up a stock pot on medium high heat and add the olive oil
4. Add in the onions, garlic, and pepper followed by the dry spices
5. Give the pot a stir and add in the canned tomatoes (carefully!)
6. Use a spatula to break up the tomatoes
7. Add the beans, corn, and the water/veggie stock
8. Add the tomato paste and the cane sugar
9. Bring the soup to a boil, then its ready to serve
10. Top the soup with avocado cubes, fresh cilantro, and some crushed tortilla chips
