The Best Oatmeal Raisin Cookie Recipe
Hey Guys! Back with another baking video this week, just in time for the Holidays! This Oatmeal Raisin Chocolate Chip cookie is so good that even Grandma Will Love!
Recipe:
4 oz or 1 stick salted butter
3/4 cup brown sugar
1/4 cup white / cane sugar
1 egg
1/2 teaspoon kosher salt
1/2 teaspoon baking soda
1 teaspoon vanilla extract
1 cup rolled oats
1 cup all purpose flour
1 cup raisins
1/2 cup chocolate chips or nuts, whatever you like
1/2 teaspoon pumpkin spice (or 1/2 teaspoon cinnamon and 1/4 teaspoon nutmeg)
In a medium saucepan, brown the butter on medium heat for 5-7 minutes. Set aside and let cool.
In a bowl, add the rolled oats, all purpose flour, raisins, chocolate chips, and spice. Mix well and set aside.
In another large bowl, add the sugars and butter. Mix well and add the egg. Mix until it's lava-like. Add kosher salt, baking soda, and vanilla extract and mix well. Add the dry ingredients in and mix again until all the flour disappears.
In a lined baking sheet, scoop the cookies onto the sheet and bake at 350 for 8-10 minutes or until slightly golden brown. Remove and cool . Enjoy with milk!

* ~ CHOCOLATE CHIP OATMEAL COOKIES RECIPE ~ *
INGREDIENTS:
- 145g (9 ½ tbsp) softened salted butter
- 100g (½ cup) caster sugar
- 100g (½ cup) soft brown sugar
- 2 tsp vanilla extract or vanilla bean paste
- 1 large egg
- 200g (1 ⅔ cups) plain or ’00’ flour
- 75g (⅔ cup) rolled oats
- ½ tsp bicarbonate of soda
- ¼ tsp ground cinnamon
- Pinch of salt
- 200g (7 oz) milk chocolate or dark chocolate, chopped into chunks
INSTRUCTIONS:
1) Line 2-3 baking trays with greaseproof paper.
2) In a large bowl, beat together the butter, sugars, and vanilla until combined into a wet-sand-like mixture.
3) Add the egg, beating it in thoroughly until well incorporated.
4) Tip the flour in and stir until you have a smooth dough.
5) Mix in the oats, bicarbonate of soda, cinnamon, salt, and chocolate chunks until you have a stiff cookie dough.
6) Place the bowl of cookie dough into the fridge to rest and chill for at least 4 hours. Leaving it overnight or for a full 24 hours will produce the best results, but even a few hours will allow a gorgeous chewy texture to develop.
7) About 20 minutes before you're ready to bake, preheat your oven - 190°C / 170°C fan / 375°F / gas mark 5.
8) Once chilled, roll small chunks of the dough and space them out generously on your prepared trays. You should get 18-24 balls of dough from the mixture.
9) Bake the dough balls on their trays for 12-15 minutes until golden at the edges. This is best done in small batches. They may seem underdone but they will firm up as they cool!
10) Cool the cookies on their tray for 5 minutes before cooling completely on wire racks.
11) Enjoy!

Ingredients
1 cup unsalted butter, softened to room temperature 216g
1 cup dark brown sugar, tightly packed 200g
1/2 cup sugar 100g
2 large eggs
1 1/2 teaspoon vanilla extract
2 Tablespoons maple syrup (real maple syrup or pancake syrup would work)
1 3/4 cup + 2 Tablespoons all-purpose flour 230g
1 Tablespoon cornstarch cornflour in UK
1 teaspoon baking soda
3/4 teaspoon salt
3/4 teaspoon cinnamon optional
3 cups old fashioned rolled oats 285g
2 cups chocolate chips I prefer semisweet or dark, but milk or even white chocolate chips would work, depending on your preference
Instructions

00:22 Beat butter in the bowl of a stand mixer (or using an electric beater) for about 30 seconds. Add sugars and beat until light and fluffy (pause to scrape down sides and bottom of bowl, if needed).
01:09 Add eggs, one at a time, beating until combined.
01:19 Stir in vanilla extract and maple syrup.
01:56 In a separate bowl, whisk together flour, cornstarch, baking soda, salt, and cinnamon.
02:33 Gradually add flour mixture to butter mixture until completely combined. Be sure to scrape the sides and bottom of the bowl so ingredients are well-mixed.
02:52 Gradually stir in oats until completely combined and then stir in chocolate chips.
03:15 Chill dough in refrigerator for 30 minutes.
03:25 Preheat oven to 350F (175C) and prepare cookie sheets by lining with parchment paper.
03:33 Drop cookie by rounded 2-3 Tablespoon-sized ball onto parchment paper, spacing at least 2 apart.
04:01 Bake on 350F (175C) for 12-13 (edges should be slightly browned, centers may still be slightly underbaked but shouldn't be raw, they'll bake completely as they cool).
