3/4 cups granulated sugar (5.3oz / 150g)
4 tablespoons unsalted butter (2 oz / 57g)
1/2 teaspoon baking soda
1/2 teaspoon Diamond Crystal kosher salt
COOKIES:
2 sticks unsalted butter (8 oz/ 227g), cut into tablespoons
1 1/3 cups all-purpose flour (6.1oz / 173g)
2 teaspoons Diamond Crystal kosher salt (0.22 oz / 6g)
1 teaspoon baking soda (0.21 oz / 6g)
2 cups old-fashioned rolled oats, not quick-cooking (7 oz / 200g)
3/4 cup packed dark brown sugar (5.3 oz / 150g)
1/2 cup granulated sugar (3.5 oz / 100g)
2 large eggs (3.5 oz / 100g) cold from refrigerator
1 tablespoon vanilla extract

The best soft oatmeal cookie recipe is here just in time for the fall! Whether you like oatmeal cookies with no mix-ins at all like I do, or if you like them with raisins or chocolate chips or walnuts, the cookie base is everything.
Using only brown sugar produces a complex malty molasses flavor and an irresistibly soft, chewy texture. A hint of vanilla and cinnamon add rich undertones that make these oatmeal cookies the total package, without any mix-ins at all!

Our Favorite Oatmeal Cookies
We love oatmeal cookies, but we don't all like the same add-ins. My kids like plain soft oatmeal cookies or soft oatmeal chocolate chip cookies. My husband likes crispy oatmeal cookies with raisins or craisins and I like crispy oatmeal cookies with craisins, raisins, nuts and coconut. The nice thing is I can make a single batch and customize them to please the whole family. For the kids, I remove some of the dough, add-in some mini chocolate chips and bake the cookies 8-9 minutes. For my husband , I add the raisins or craisins and bake them 10-11 minutes. I can reserve a little dough, throw in some nuts and coconut and bake them for 10-11 minutes. I have oatmeal cookies the way I like them too! - Michele
Ingredients:
1 1/4 cup margarine
3/4 cup brown sugar
1/2 cup sugar
1 egg
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt
1/4 tsp nutmeg (optional)
3 cups oats
1 cup add-ins (raisins, craisins, nuts, coconut, chocolate chips etc..)
Pregeat oven to 375 degrees. Cream together wet ingredients. Add dry ingredients and the oats and add-ins last. Mix. Bake 8-9 mins for chewy cookies. Bake 10-11 minutes for crisp cookies.
