How To make Oatmeal Chip Cookies/The Dessert Show
6 oz Semisweet chocolate chips
2 c Corn flakes
2 c Oatmeal
1 c Coconut
1 c Chopped pecans
2 c Butter
2 c Brown sugar
2 c White sugar
4 Eggs
2 ts Vanilla
4 c Flour
2 ts Soda
2 ts Baking powder
1/2 ts Salt
Preheat oven to 325 degrees. In a large bowl, mix corn flakes, oatmeal, coconut, pecans and semisweet chocolate chips. In mixer, cream together butter, brown sugar and white sugar. Add eggs, vanilla, flour, baking powder, soda and salt to creamed mixture and mix well. Combine dry mixture with creamed mixture and mix well. Use 1/4 measure cup of batter for each cookie, six to a cookie sheet. Bake 15 minutes or until light brown. THE DESSERT SHOW SHOW #DS3029 -----

PECAN BRITTLE:
1 1/4 cups coarsely chopped pecans (5oz / 142g)
3/4 cups granulated sugar (5.3oz / 150g)
4 tablespoons unsalted butter (2 oz / 57g)
1/2 teaspoon baking soda
1/2 teaspoon Diamond Crystal kosher salt
COOKIES:
2 sticks unsalted butter (8 oz/ 227g), cut into tablespoons
1 1/3 cups all-purpose flour (6.1oz / 173g)
2 teaspoons Diamond Crystal kosher salt (0.22 oz / 6g)
1 teaspoon baking soda (0.21 oz / 6g)
2 cups old-fashioned rolled oats, not quick-cooking (7 oz / 200g)
3/4 cup packed dark brown sugar (5.3 oz / 150g)
1/2 cup granulated sugar (3.5 oz / 100g)
2 large eggs (3.5 oz / 100g) cold from refrigerator
1 tablespoon vanilla extract

Ingredients:
• Old Fashioned Oats – 1 and ½ Cups
• All Purpose Flour – 1 Cup
• Large Egg (at room temperature) – 1
• Unsalted Butter (at room temperature) – 1 Stick (1/2 Cup)
• Brown Sugar – 2/3 Cup
• White Sugar – 1/3 Cup
• Vanilla – 2 tsp
• Salt – ½ tsp
• Baking Soda – ½ tsp
• Chocolate Chips (of your choice) – 1 Cup (I used semi sweet)
Steps:
1. Mix the softened butter with both sugar in a stand mixer or electric mixer or using a whisk by hand, until both butter and sugar are well combined and soft.
2. Add egg and vanilla and mix until smooth fluffy paste is formed.
3. Add salt and baking soda to flour and keep it aside.
4. Add the flour mixture to butter sugar egg paste and mix it just until combined.
5. Add oats and mix them into the dough as well.
6. Finally add the chocolate chips and mix it all until they are evenly distributed in the cookie dough. Note: You can add an extra ½ cup to 1 cup of toasted chopped nuts of your choice if you want at this step and mix them in as well.
7. Chill the cookie dough in the refrigerator for about an hour.
8. Scoop the cookie dough onto a baking sheet. Place them a couple inches apart to allow them to expand while baking.
9. Optional step: you can add a few extra chocolate chips on top of each cookie. It does not change the taste, just makes the cookies look pretty, once baked.
10. Bake cookies at 375 F for 10 minutes and allow them to cool completely. Note: Cookies may not look cooked completely when they come out of the oven, but they will continue to cook through as they cool down. So, resist the urge of sneaking a cookie until they are cooled down. It takes about 10 to 15 minutes.
