4 Egg yolks
2 1/4 c Brown sugar; packed
1 tb Water
1 ts Vanilla
2 c Flour
1 ts Baking powder
1/2 ts Salt
1 c Gum drops
3/4 c Walnuts
4 Egg whites
Beat egg yolks with beater. Stir in brown sugar, water and vanilla. In another bowl, sift together flour baking powder and salt. Mix with egg-sugar mixture. Stir in gum drops and walnuts. This is where we had breakfast and is where you should go to at least once. Housed in a former radio station after World War 2, this traditional Okinawan house is beautifully preserved. They have two selections for breakfast both priced at ¥1000 each and comes with a choice of drink.

・2.5 oz (70g) Thinly sliced beef

#BeefCheeks are definitely the hidden gem of all the beef cuts. If you haven’t smoked them yet, GO!
I’ve smoked them at 275F and settled my @meatermade probes at 165F. It took about 4 hours and the bark was phenomenal. I then placed the cheeks in an aluminium tray with beef stock to help them breaking down. Once the beef cheeks probe like butter, you’re done. Internal should be between 205-210F. Little rest then pull or slice.
