How To make Hazlnut Squash Ravioli Filling
1 sm Butternut squash
1/2 c Hazelnuts
1 c Onions, diced
1 ts Garlic, minced
1 tb Olive oil
1/2 c Breadcrumbs
Preheat oven to 350F. Cut squash into quarters, remove seeds & place in a baking dish with 1/2 c water. Cover & bake till tender. Cool & then scrape out the flesh & mash. Set aside. Increase oven temperature to 375F. Place hazlenuts on a cookie sheet & roast until lightly browned, about 7 minutes. Let cool & then rub off their skins. Saute onion & garlic in oil until browned. Add 1 c suqash & cook for 2 minutes over medium heat. Place all ingredients in a food processor & process until smooth. Use to fill pasta dough of your choice & cook as desired. Ingredients:
- brown sugar (optional)
- balsamic vinegar (or balsamic glaze)
- butternut squash ravioli (I've used Trader Joe's, La Pasta, & Rana)
- butter
- parmesan cheese (shaved is preferable)
- pepitas (raw pumpkin seeds)
You'll also need:
- large pot for ravioli
- 1-2 small pots for glaze and brown butter
- pasta fork
- strainer
- colander
- 2 large cooking spoons (or wash one after glaze is done)
Directions:
1. Make balsamic glaze & allow to cool (or use store-bought)
Follow instructions (can scale down using 4 parts balsamic vinegar to 1 part brown sugar):
2. Boil water (follow instructions on ravioli package- required 4 quarts for TJ's)
3. Add ravioli to boiling water (continue to follow package instructions)
4. Add butter (slices preferable) to small pot and brown over medium heat
5. Remove ravioli from pot using pasta fork and place in colander to drain
6. Plate ravioli
7. Top with brown butter, parmesan cheese shavings, pepitas, & balsamic glaze (all to taste)
8. Enjoy!

Butternut Squash Ravioli is the perfect fall or winter dish, especially with brown butter, fried sage and hazelnuts. The best part is you’ll need less than 30 minutes to make it and it’ll taste like it was made in a 5-star kitchen!

Agnolotti on pumpkin squash purée- tis the season for this hearty pasta dish to warm Bae’s soul…and tummy.
In the second attempt to practice this again, I opted to do tri colored pasta with swirls. The filling, a beautiful shrimp, ricotta and smoked Gouda, roasted garlic and garlic chive hit cus I like a little green herb in my filling.
The pumpkin squash was roasted, then puréed before cooking again with heavy cream, salt and garlic chive.
The pasta came out so beautiful, as I grow closer to conquering all things pasta, I will keep testing out texture, color and pasta shapes. But no matter what form, my love for Bae comes only in one form, delicious heartfelt food, each and every day????????
