How to Make: Roasted Vegetable Medley
You can use your choice of vegetables, optional
In this video i used;
Whole frozen green beans
Cut 1-1/2 inch carrots
Pearl onions
Zucchini
Yellow squash
Small cut corn
Whirl oil or butter 1/2 stick melted
Fresh dill and chives
Garlic and onion powder
Vegetable seasonings or perfect pinch seasoning
1/4 cup of chicken or vegetable stock or water
**All seasonings generously used, and are based on how much vegetables used.
Slow oven roast, covered cooked @ 325 degrees. Remove covering last 15 mins of cooking.

Not just for Thanksgiving, but a vegetarian delight that can be enjoyed year-round. Starchy veggies as carrot, parsnip, sweet potatoes, red beets, rutabaga, turnip, baby red potato, baby gold potato are a great way to replace grains in your diet. They also provide vitamins and nutrients like vitamin A, vitamin C, potassium, magnesium, and dietary fiber to name the most important.
Once your vegetables are roasted, just the simple application of tossing in sauteed Brussels gives this colorful delight the final finish. The finishing flavor of black pepper, lemon juice + fresh parsley tops it off.
Can be used as a complete side dish for all proteins as well whether you like fish, chicken, pork, lamb, or beef
Creamy Vegetable Casserole Recipe
An easy and delicious cheese vegetable casserole that everyone will love!
1 cauliflower
1 pepper
3 carrots
1 zucchini
Olive oil
Salt & pepper
Preheat oven to 450 degrees F. Roast vegetables for 15-20 minutes until tender.
Cream mixture:
1 cup sour cream
1 cup heavy cream
1 & 1/2 cups mozzarella cheese
Italian parsley (optional)
Bake the vegetables mixed with the cream mixture for 15 more minutes or until golden on top.
