How To make Ham and Potato Quiche
1 c All-purpose flour
1/2 c Vegetable shortening
3/4 ts Salt; divided
3 tb -to 4 tb cold water
1 1/2 c Ham; cooked & cubed
1 md Potato; boiled, peeled & cut
- into 3" strips 1 c Cheese, Swiss; grated
1 c Milk
4 Eggs
1 ts Onion flakes
1/4 ts White pepper
Preheat oven to 350. Combine flour, shortening and 1/4 ts salt in large bowl; mix with fork or pastry blender until mixture is consistency of fine crumbs. Gradually add water; stir until dough holds together. Gather dough into a ball. Roll out on lightly-floured pastry cloth to a circle 2" larger than 9" pie plate. Ease crust into pie plate; trim and flute edges. Sprinkle ham, potato and cheese evenly over bottom of crust. Combine milk, eggs, onion flakes, remaining 1/2 ts salt and pepper in small bowl; mix lightly. Pour over ingredients in crust. Bake 45-50 minutes, or until center is set. Let stand 10 minutes. This is such a delicious breakfast!!! Great meal to store in freezer or refrigerator.
Recipe:
4 Large eggs
1/2 c. mild cheddar cheese
1/3 c. frozen spinach(no need to thaw)
1/4 c. diced onion
1/4 c. diced ham
1 baked potato (pre-cook in microwave for 3 minutes)
1 tbs of butter to pour over potato
1 tsp garlic (sprinkle over potato)
Mix ingredients & Bake 400 degrees for 15 minutes
To Make breakfast in cup add package of instant grits & your favorite toppings!!!

Ingredients:
1 pie crust refrigerated
6 large eggs
3/4 cup half and half
1 tsp salt
1/4 tsp black pepper
1 1/2 cups cooked ham chopped
1 cup mozzarella cheese shredded
1 cup cheddar cheese shredded
4 tbsp scallions
Instructions:
1. Preheat oven to 375F and place frozen pie dish into refrigerator to thaw.
2. In a large bowl, mix together eggs, half and half, salt and pepper.
3. Once the pie crust is thawed, pierce the bottom with a fork then sprinkle the ham, scallions, and 1 cup of the mozzarella and cheddar mix into the pie crust. Pour the egg mixture over the top and sprinkle the remaining cup of cheese on top.
4. Bake for 25 minutes covered then cover with aluminum foil for the remaining 10 minutes if the crust starts to brown too much.
5. Once the center is completely set, let cool for 5-10 minutes before slicing and serving.
