This Halloween will be different for many of us compared to previous Halloweens. Finding the right recipe with the oooooh ???? factor for the family to compensate for less trick or treating will be the main aim!
Halloween gets a little tricky, but we have the perfect recipe for you to enjoy your Spooky Halloween meal.
It's a friendly recipe for everyone who is gluten intolerant, diabetic, is a vegan (unless you choose to use animal based protein instead) or on a keto diet.

Recipe: Halloween Meatloaf
Ingredients:
- 800g Vegan minced meat (the type that sticks together)!
- Finely chopped onions
- 1tsp gum arabic in 1/8 cup boiled water
- 3 chopped garlic cloves or 4 tsp powder
- 2 tblsp ketchup
- 1 tsp parsley
- 2 tblsp psyllium husk
- 1/4 cup vegan milk
- 1 tsp sea salt
- 1/2 tsp all spice
- 1/2 tsp Black pepper
- 1 tsp paprika
SAUCE:
- 1/2 cup tomato sauce
- 1 tsp vinegar
- 1 tsp garlic powder
- 1/4 tsp Black pepper
- 1/4 tsp salt

It's Spooky! It's Scary! It's Mice Meatloaf and it's whats for your Halloween dinner!
Welcome to my channel! My name is Debbie Cuevas and I'm a Certified Health Coach. I love helping others with their health goals. One of the ways I do this is to share healthy recipes with all of you. Today I will be showing you how to make BBQ Cheddar Mice Meatloaf! So delicious and fun to make! Perfect for a Halloween party or dinner!
???? BBQ Cheddar Meatloaf ????
Ingredients:
1 cup green spring onion cut in thin slices
10 sprays non-stick pan spray
¼ tsp Salt
½ tsp Pepper
1 1/2 pounds Ground Beef
1/2 teaspoon Garlic Powder
1 Egg, whisked
1/4 cup + 4 tablespoons sugar-free BBQ Sauce (divided)
4 ounces Cheddar Cheese, cut into 1/4″ cubes
*For the Mice accessories:
6 small spaghetti noodles for each mouse whiskers (3 on each side)
Carrot slices for ears ( 2 small circles for each mouse)
Frozen peas for eyes (2 peas for each mouse)
Scallion pieces to use as a tail (1 piece for each mouse)
Directions:
Over medium heat, the non-stick spray in a large skillet. Cut the onion into thin slices and add the onions to the pan. Sprinkle the onions with salt and pepper and stir. Cook the onions, stirring every couple of minutes, until the onions are caramelized. Turn the heat down if you notice the onions are burning. Once caramelized, set the onions aside to slightly cool.
Preheat the oven to 425 degrees. Prepare a large baking sheet by lining it with foil.
In a large bowl combine the ground beef, egg, 4 tablespoons BBQ sauce, cheese cubes, caramelized onions, and a dash of salt and pepper. Mix together just until combined.
Divide the mixture into 5 equal-sized portions and form them into mini-meatloaves. Place each one of the foil lined baking sheet. Spread 1-2 tablespoons of BBQ sauce over the top of each loaf and then bake for 20 minutes, or until no longer pink the center. (Spread the last BBQ Sauce after it has cooked.)

3 condiments
*For those of you following the 5&1 plan do not consume the accessories for the mice as they are not approved on plan.

INGREDIENTS:
●1 1/2 lbs lean ground beef
●1/2 cup uncooked long grain white rice
●1/2 medium onion , finely chopped
●1 egg , beaten
●1 pinch black pepper
●uncooked spaghetti , broken into quarters
●thinly sliced raw carrot
●black peppercorns , cooked black beans
●1 (19 ounce) can ground tomatoes
●1 1/2 cups water
●1 tablespoon granulated sugar
●1 tablespoon Worcestershire sauce
●1 teaspoon salt
●1/4 teaspoon black pepper

TY Pie prepares one of her alltime favorite meals MEATLOAF with a twist on halloween! ZOMBIE MEATLOAF
Ingredients
2 lbs of ground beef
1 Tbsp of Olive Oil
1 Onion, finely diced
3 Cloves of Garlic: 1 minced 2 sliced
2 Slices of whole wheat bread
½ cup of Milk
1/2 cup of Parmiggiano Reggiano
1 Egg
1 container mixed vegetables baby food
Dash of Worcesteshire Sauce
Dash steak sauce
Salt and Pepper, to taste
For the Glaze:
3/4 cup of Ketchup
¼ cup of Brown Sugar
1 tsp of yellow Mustard
1 tsp of Paprika
1 tsp of Garlic salt
1) Preheat oven to 375
2) In a sauté pan over medium heat, cook the onion and garlic in the olive oil for about 6 to 8 minutes or until soft and translucent, allow to cool completely.
3) In a small bowl, put the slices of bread and pour the milk over them, let them sit for a few minutes or until the bread soaks up all the milk.
4) In a large bowl, combine the beef, the milk soaked bread, cooked onion and garlic, parsley, parmiggiano, worchesteshire sauce, eggs, salt and pepper. Mix until everything is well combined but don’t over mix and compact the mixture too much otherwise your meatloaf will be tough.
5) place the meat mixture onto lined baking sheet and form it into a zombie head, add sliced garlic as teeth, set aside.
6) In a small bowl, mix together all the ingredients for the glaze. Smear half of it evenly over the top and reserve the rest.
7) Bake the meatloaf for 40 minutes, then smear the rest of the sauce on top and put it back in the oven to bake for another 15 minutes.
