The Ultimate Greek American Gyros
Follow my easy recipe to create the most delicious “Restaurant Quality” gyro pitas at home. This gyro meat can and should be doubled and even tripled because it freezes well. As a matter of fact, your family will beg you for this Greek-American classic once they try it.

Serves 6:
1 medium onion, quartered
1-pound ground lamb
1-pound ground beef
5 garlic cloves
2 teaspoons salt
1 heaping teaspoon dried oregano
1 teaspoon finely chopped rosemary
1 heaping teaspoon cumin powder
½ teaspoon ground black pepper
Pinch of crushed red pepper flakes
Equipment: 9 x 5-inch loaf pan
For the Sandwiches:
Pita bread
Onion slices
Tomato slices
Tzatziki Sauce
Lettuce
Crumbled feta cheese
INSTRUCTIONS
Preheat oven to 325 °F, 160 °C.
Place the garlic cloves in a food processor and pulse until very finely chopped.
Add onion and puree until smooth.
Add ground beef with all of the spices. Pulse until the mixture becomes like a paste. Scrape down the sides of the bowl in between pulses.
Place the mixture in a loaf pan. Compact it as much as possible.
Bake for 45 minutes to 1 hour or until the internal temperature registers 165 °F.
Allow the pan to cool at room temperature completely. Refrigerate at least 2 hours before removing from the pan.
Remove from pan onto a cutting board. Using a sharp serrated knife, slice it thinly. Pour all of the pan juices over the slices along with any of the fat that has gelatinized. It adds so much flavor when heating it up for the sandwiches.
At this point, the gyro slices can be placed in a freezer-safe bag and frozen for future use.
To make the Gyro sandwiches, place a cast iron pan over medium heat and cook the gyro slices until they are browned on both sides.
Warm the pita bread slightly. Place some chopped lettuce, onion and tomato slices over the pita, the warm gyro slices and tzatziki sauce with crumbled feta. Serve immediately. Enjoy!
NOTES
Freezer Instructions: Place the cooked gyro slices in a freezer bag or an airtight (freezer-safe) container and store in the freezer for up to 3 months. When ready to use thaw and pan fry until golden.

***RECIPE, MAKES 8-10 SANDWICHES***
10 oz (300g) plain Greek yogurt
1 cucumber
1 lemon
1-3 garlic cloves
fresh or dried dill
1 red onion
2 lb (900g) ground lamb
2-3 tbsp Herbs de Provence (or any combination of dried thyme, oregano, marjoram, rosemary)
1-2 tsp ground cumin
White wine (or water) for deglazing
8 oz (200g) fresh tomatoes
8-10 pita loaves or hamburger buns
ketchup
flour
salt
pepper
To make the tzatziki, grate the cucumber and squeeze as much water out of it as you can. Combine it with the yogurt in a mixing bowl along with some lemon juice, grated or finely minced garlic, olive oil, dill and salt. Add the flavorings in conservative amounts, mix, taste, and add more of whatever you want.
Peel the onion and slice one quarter of it into thin slices for garnish. Chop up the rest. Put a wide pan on medium-high heat, put in some olive oil and fry the chopped onions until just starting to brown. Put in the lamb and stir aggressively with a wooden spoon to break it up and to continuously deglaze the bottom of the pan with the water that will come out of the meat.
After about 10 minutes, enough water should have evaporated that the meat will start to brown. Brown it as thoroughly as you can without letting the bottom of the pan burn. Put in a big spoonful of flour, stir, and let it brown in the fat for a moment. When burning is imminent, deglaze with white wine or water. (If using water, you might also put in a splash of vinegar — white balsamic is the closest substitute for white wine.)
Mix in the herbs, cumin, salt, pepper and a little ketchup (maybe 2 tbsp) to taste. You might need to add more liquid to get a saucy consistency. Slice up the tomatoes. Warm the bread. Put on the meat, top with tzatziki, sliced onions and tomatoes.

???? For this Delicious Lamb Gyro you will need:
????2 Lbs Ground Lamb
????1 medium onion, chopped small
????2 tsp Mediterranean Sea Salt
????1 tsp dried oregano
????1 tsp finely dried rosemary

????1/2 tsp onion powder
For the Sandwiches:

INSTRUCTIONS

✨Bake for approximately an hour or until the internal temperature reaches to 165 °F.

✨Remove from pan onto a cutting board. Using a sharp serrated knife, slice it thinly.
⭐️ To make the Gyro sandwich, put sliced gyros in a pan or griddle and cook both sides until they are brown.
Warm the pita bread slightly. Place some chopped lettuce, onion and tomato slices over the pita, the warm gyro slices and tzatziki sauce. Serve immediately. Enjoy!

The BEST Chicken Gyro | The Golden Balance

Chicken Gyro ????
2 lbs chicken thighs
4 pita of choice
5 cloves garlic
1/2 shallot
1/4 cup yogurt
2 Tbsp olive oil
Zest and juice of a lemon
Seasonings:
1 packet Sazon
1 tsp chipotle chili powder
2 tsp paprika
1 tsp oregano
1 tsp cayenne pepper
1/2 tsp cumin
Salt to taste
Bake for 20 minutes at 400F, flip and finish at 425F ~ took about 10-15 more minutes
Finish with tomato red onion or any pickles you like!
