How To make Ground Turkey and Black Bean Chili
1 tablespoon Oil
2 cups Finely chopped red pepper
1 cup Chopped onion
1/2 cup Finely chopped carrot
2 large Garlic cloves
minced
4 teaspoons Chili powder
2 teaspoons Ground cumin
1 pound Ground turkey breast
2 15oz cans black beans :
rinced & drained
3 cups Canned chicken broth
1 tablespoon Tomato paste
Heat oil in large saucepan or dutch oven over med heat. Add pepper, onion, carrot and garlic; saute until tender, about 12 min. Add chili powder and cumin; stir to blend. Increase heat to med high and add turkey; break up with spoon and saute until turkey is no longer pink, about 3 min. Add beans, broth and tomato paste and bring to boil. Reduce heat and simmer chili until liquid thickens, stirring occasionally, about 1 hour. Season with salt & pepper. 260 calories; 10 g fat.

The dry rub is the key to this recipe and it is sooo good!!! Found it right here on Youtube and I've been using it for years! Big thank you to the BBQ Pit Boys for sharing this with the world - I use it in so many ways!!! Ingredients for the rub are listed below, and the link to the dry rub recipe is here:
(Recipe Serves 4-6 - if you can bring yourself to share)
Shopping list:
1 lb ground turkey
1 onion
4 cloves garlic
1/2 green bell pepper
1/2 red bell pepper
1 tbs chili powder
2 tbs dry rub (ingredients are listed below)
2 cups tomato sauce
2 cups black beans
Directions:
-sauté diced onion, bell pepper and garlic a few minutes - until onion is translucent and veggies has softened
-add ground turkey and cook until browned and cooked through
-add tomato sauce, black beans, chili powder, dry rub - stir together
-cover and simmer about 30 min
-enjoy!!! (try not to eat the entire thing at once)
***Recipe can be doubled, tripled, etc***
DRY RUB INGREDIENTS:
Sugar – ¼ cup
Brown Sugar – ¼ cup
Paprika – ¼ cup
Coarse Salt – 3 Tbs
Black Pepper – 1 Tbs
Garlic Powder – 1 Tbs
Onion Powder – 1 Tbs
Chili Powder – 1 Tbs
Cayenne Pepper – 1 Tbs

3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

Shopping List:
2.25 lbs Ground Beef (80/20 or 85/15)
4 cloves minced garlic
1 diced onion
2 large jalapenos
1/2 red bell pepper
1/2 green bell pepper
3-4 slices of thick cut bacon (optional)
4 oz black beans
15 oz kidney beans
smoked paprika, ancho chile powder, chipotle chile powder (to taste 1/4 tsp or so)
cinnamon sugar (to taste)
salt, pepper, garlic, onion powder
6-8 oz mexican beer or chicken stock
1 tbsp better than bouillon chicken or beef base
2 tbsp tomato paste
worcestershire sauce & hot sauce (to taste)
14oz can crushed tomatoes
8oz can tomato soup
14oz fire roasted diced tomatoes
3 dashes of liquid smoke
2-3 tbsp brown sugar (if needed)
Cayenne pepper (as needed for heat)
Directions:
Start by adding a bit of cooking oil and your 3 slices of thick cut bacon. Once bacon begins to get crispy, remove it and add the ground meat directly to the pot. Once browned, begin adding your seasonings as seen in the video. Next, add in your diced veggies and mix to incorporate. Deglaze the pot with your beer or chicken stock. Bring to a boil and then reduce to a simmer. Begin adding in your tomato products and beans and cover to simmer for 30-60 minutes stirring occasionally (do not let anything stick to the bottom and burn! heat should be on low) Taste for seasoning and add whatever you feel it needs (more spice - add cayenne or hot sauce... add brown sugar or cinnamon sugar to sweeten if desired) Total cook time should be around 2 hours to allow all of the flavors to come together. Serve with your favorite chili toppings and enjoy!
