Grilled Salmon in Foil With Lemon & Dill | Healthy Recipes Over 40
This grilled salmon in foil is perfect for a summer barbecue. Bye, bye boring hot dogs… hello healthy summer meal. In the time it would take you to grill a burger or hot dog, you can have a perfectly cooked piece of salmon with NO cleanup. Not only is this recipe healthy and delicious, it is also ridiculously easy to make! That’s a win, win, win, folks!

INGREDIENTS:
Salmon fillets
Lemon
Fresh dill
Ground fresh pepper
PREPARATION:
*Preheat grill to high.
*Place salmon filet, skin side down, in the middle of a piece of aluminum foil.
*Squeeze fresh lemon on salmon.
*Sprinkle with freshly chopped dill and freshly ground black pepper. Top with 3 lemon slices.
*Roll up the sides of the foil and close it around the salmon. Place the foil-wrapped packet on the hot grill.
*Turn grill temperature to medium.
*Close barbecue lid and cook (without turning) for 10 minutes.
*Remove from grill and serve in the foil with additional lemon wedges

Ingredients
1 - 32 oz piece of salmon
1 - lemon, sliced thin
1 tbsp - lemon juice
1 tbsp - capers
1 tbsp - garlic, minced
1 tbsp - fresh thyme
1 tbsp - olive oil
Salt and freshly ground pepper
Preparation
1. Line a rimmed baking sheet with parchment paper and place salmon, skin side down.
2. In a small bowl, combine lime juice, garlic and olive oil.
3. Apply the mixture evenly on the salmon.
4. Sprinkle with salt and pepper.
5. Arrange with sliced lemon, capers and thyme.
6. Place baking sheet in a cold oven, then turn heat to 400 degrees F.
7. Bake for 20 - 25 minutes.
8. Serve immediately.

Here is a simple and heart-healthy recipe that is perfect for date night at home or for when friends are coming over.

Ingredients:
130g Salmon
1/2pc. Lemon
Thyme
Rock Salt
Pepper
100g 1pc. Carrot – cut into sticks
30g 1pc. Red Bell Pepper – julienne
50g 1pc. White Onion – sliced
50g 10pcs. Baguio Beans – cut in 3inch long
1tbsp. butter
Olive oil
Preparation:
1.) Make sure the salmon is fresh and is in room temperature. Wash the salmon and pat dry with clean paper towel.
2.) Slice the lemon thinly.
3.) Grind the pepper using mortar and pestle.
4.) Cut the carrot into half crosswise and then cut into sticks, around 2 1/2 inches long.
5.) Remove the top and bottom tip of the bell pepper and cut into long thin strips (julienne).
6.) Remove the tips of the beans and cut in half crosswise, around 2 1/2 inches long.
7.) Cut the onion in half, cut off the ends, peel and then slice into strips.
Cooking Instructions:
1.) In medium heat, melt the butter in the pan.
2.) Add a little olive oil to prevent the butter from burning.
3.) Stir fry the onions.
4.) Add in the carrots and beans and cook for 3 minutes.
5.) Add in the bell pepper and cook for 1 minute.
6.) Season with salt and pepper, stir, and cook for 1 more minute and set aside.
7.) Season the salmon with salt, pepper and thyme. Squeeze some lemon on it.
8.) Grease the grill with olive oil and pre-heat to medium-high heat.
9.) Place the salmon on the grill skin side down. Grill until crispy and grill marks are visible.
10.) Grill over medium-high heat 3-4 minutes on each side or until desired degree of doneness. On the final minute, brush with olive oil and add on top the lemon slices.
Serves 1-2
I cooked the vegetables first because it is best to serve the salmon immediately after grilling. Enjoy!

Lemon Butter Salmon Foil Packs | Delish

INGREDIENTS
2 zucchinis, thinly sliced
2 cloves garlic, minced
kosher salt
Freshly ground pepper
2 lemons, thinly sliced
4-6 salmon fillets
4 tbsp. butter, divided
4 sprigs thyme
white wine
Fresh parsley, for garnish
DIRECTIONS
1. Preheat grill to medium-high.
2. Lay a large piece of foil on a flat surface. Top with a single layer of sliced zucchini and scatter some garlic on top.
3. Season with salt and pepper, then lay a few lemon slices down. Top with a salmon fillet and season with more salt and pepper.
4. Place a tablespoon of butter on top of the salmon fillet. Add a sprig of thyme, then pour a small splash of white wine over salmon.
5. Fold the foil in half then fold up the edges to seal the packet. Repeat with remaining ingredients to make four packets.
6. Place packets on grill and cook until the salmon is cooked through and the zucchini is tender, 10 to 12 minutes.
7. Garnish with parsley and serve warm.
