How To make Grilled Salmon with Lemon & Thyme
Ingredients

salmon, fillet, skinned
3
tablespoon
cognac
1/4
cup
lemon, peel, minced
2
tablespoon
shallot, minced
1 1/2
tablespoon
kosher salt
1 1/2
tablespoon
sugar, brown
1
tablespoon
thyme, fresh, minced
3/4
teaspoon
pepper
Directions:
Place salmon fillets on heavy large baking sheet. Rub cognac over both sides of fish. Mix together all remaining ingredients in small bowl. Rub over both sides of fish. Cover with plastic wrap. Top with another baking sheet. Weight with heavy object. Refrigerate at least 6 hours or overnight.
Prepare barbecue (medium-high heat). Grill fish until cooked through, about 3 minutes per side. Transfer to plates and serve.
Note: Use a sturdy red wine. Serve with sauteed zucchini. Diagonally slice thickly some zucchini with peel left on and brush with butter, lemon and thyme mixture and grill next to the fish.

✅Ingredients
• 4 skin-on salmon portions, about 1-inch thick
• 1 tablespoon olive oil
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1 lemon, cut into wedges
✅Instructions
1️⃣ 00:00:58 - Preheat an outdoor grill to high heat, about 500 degrees F.
2️⃣ 00:00:22 - Rub flesh side of salmon portions with olive oil. Season with salt and pepper.
3️⃣ 00:01:05 - Place the salmon skin side up over direct heat on the grill. Close the lid and let cook 3 to 4 minutes until grill marks form.
4️⃣ 00:01:19 - Use tongs or a spatula to gently flip the salmon skin side down. Either reduce the heat to medium for a gas grill, or to indirect heat for charcoal. The salmon should release easily from the grill grates. Continue cooking with the lid close for another 4 minutes until salmon is cooked through and easily flakes with a fork. Salmon needs to be cooked to an internal temperature of 145 degrees F.

INGREDIENTS:
Salmon fillets
Lemon
Fresh dill
Ground fresh pepper
PREPARATION:
*Preheat grill to high.
*Place salmon filet, skin side down, in the middle of a piece of aluminum foil.
*Squeeze fresh lemon on salmon.
*Sprinkle with freshly chopped dill and freshly ground black pepper. Top with 3 lemon slices.
*Roll up the sides of the foil and close it around the salmon. Place the foil-wrapped packet on the hot grill.
*Turn grill temperature to medium.
*Close barbecue lid and cook (without turning) for 10 minutes.
*Remove from grill and serve in the foil with additional lemon wedges
