How To make Grilled Polynesian Chicken

2 tb Soy sauce, lite
1 tb Brown sugar
1/4 ts Ginger
1/8 ts Garlic powder
4 Chicken breast, boneless
8 oz Pineapple slices, drained
4 ts Coconut
In small bowl, combine soy sauce, brown sugar, ginger and garlic powder; mix well. Place chicken on plate. Brush both sides of each breast half with soy sauce mixture. Cover; let stand 15 min. at room temperature to marinate. Heat grill. When ready to barbecue, oil grill rack. Place chicken on gas grill over med. high heat or on charcoal grill 4-6 inches from med. high coals. Cook 8-10 min. or until chicken is tender and juices run clear, turning once. Top each with pineapple slice during last few minutes of cooking time. Serve sprinkled with coconut. S: Fast & Healthy. Calories: 190, Fat: 4g

For the marinade, combine 1 cup each: ketchup, soy sauce, pineapple juice, brown sugar and 2 tbsp ginger and garlic. Got everything from @marianosmarket , of course.

HULI HULI CHICKEN | Hawaii’s Famous Grilled Chicken
Huli huli chicken is a Hawaiian favorite!! It’s Tender chicken marinated and smothered in a tangy, sweet and savory sauce, then grilled to perfection! I made this for a gathering over the weekend and my family just loved it!! My hubby said this recipe brings him back to Hawaii????!
Huli Huli Chicken
Ingredients
2 1/2 - 3 lbs boneless, skinless chicken thighs, trimmed and cut in half
20 oz can sliced pineapples (reserve 1/2 cup juice for marinade)
1/2 cup soy sauce
1/2 cup ketchup
1/2 cup brown sugar
3 garlic cloves, minced
1/2 teaspoon black pepper
Directions
In a bowl mix together 1/2 cup of canned pineapple juice, soy sauce, ketchup, brown sugar, garlic and black pepper. Remove and reserve 2/3 cup of the marinade for basting.
Add chicken thighs to the marinade and mix until well combined. Cover and refrigerate for 4 hours or overnight.
Place reserved marinade in a sauce pan and bring to a boil. Let simmer until thickened, about 1-2 minutes.
Preheat outdoor grill to medium high/high heat. Place chicken on grill, cover and cook for 5-6 minutes. Flip chicken over and baste with the sauce. Cover and cook for another 5-6 minutes and continue to base as needed. Place pineapple slices on the grill and cook 3-4 minutes per side.

- 2 lbs Boneless Skinless Chicken you can use Chicken Breasts or Chicken Thighs
- 20 ounce can sliced Pineapples
- ½ Cup Soy Sauce
- ⅔ Cup Brown Sugar
- 2 Tablespoons Ketchup
- 1 Tablespoon Sesame Oil
- 2 Teaspoons Fresh Garlic
- 2 Teaspoons Fresh Ginger
- fresh cilantro (OPTIONAL) for garnish
1) Make Huli Huli Sauce - Drain pineapples and reserve almost 1 cup of Pineapple juice from the can. Pour Pineapple juice in a medium-sized mixing bowl. Add Soy Sauce, Ketchup, Sesame Oil, Brown Sugar, Freshly chopped ginger, and minced garlic. Stir well to combine. This is your Huli Huli Sauce.
2) Marinate chicken in Huli Huli sauce - Place chicken in Huli Huli Sauce. Cover the plate with a lid. Allow your chicken to marinate for at least 2-hours. It is best if you refrigerate overnight.
3) Grill: Preheat your Outdoor grill or your Grill Pan. You can also use your broiler to grill your chicken. Baste chicken with Huli Huli sauce midway. Grill until you see charred marks on one side. Flip over and grill the other side as well. Grill the pineapples as well.
4) Serve - Finally, Garnish and serve with chopped parsley/cilantro over rice.
