How To make Polynesian Kabobs
20 oz Pineapple Chunks In Syrup
6 tb Soy Sauce
3 tb Honey
1 tb Dry Sherry
1 ts Grated Orange Peel
1/8 ts Garlic Powder
2 lb Cooked Ham, Cut Into 25
-Cubes (1 Inch) 1 lb Thick Sliced Bacon
25 lg Stuffed Olives
25 Cherry Tomatoes
Drain pineapple; reserve syrup. Blend syrup, soy sauce, honey, sherry, orange peel and garlic powder in large bowl; stir in ham cubes. Cover; refrigerate 1 hour, stirring occasionally. Cut each bacon slice crosswise in half; wrap pineapple chunks with halved bacon slices. Thread bamboo or metal skewers with a wrapped pineapple chunk, an olive, another wrapped pineapple chunk, a marinated ham cube and a cherry tomato. Place skewers on rack of broiler pan; brush with marinade. Broil 3 to 4 minutes on each side, or until bacon is crisp. Typed by Syd Bigger.

SUMMER KEBABS
Have yourself a garden party with summer kebabs. This family recipe is sure to be a winner at your next garden party this summer. A combination of both meat and summer vegetables, this dish will provide all you need without the traditional sides. If you prefer, you may add a starch like rice, potatoes or corn to complement the kebabs. The Polynesian style marinade will have your tastebuds doing the hula dance. These flavors combined with the smoke from the grill will have 'em coming back for more and more. On special occasions, I will add beef tenderloin to the mix. Join my brother Joel and I on a summertime grilling adventure.
Sticky Pineapple Chicken
Here's what you'll need!
Sticky Pineapple Chicken
Serves: 2
INGREDIENTS
1 large pineapple
1 tablespoon cooking oil
6 boneless chicken thighs, cut into bite-size squares
Salt, to taste
Pepper, to taste
1 tablespoon hoisin sauce
1 tablespoon soy sauce
1 tablespoon brown sugar
1 tablespoon garlic paste
100 milliliters chicken stock
Rice, to serve
Sesame seeds, to garnish
PREPARATION
1. Using a sharp knife carefully cut the pineapple in half lengthways.
2. Using the tip of a knife cut around the edge of the pineapple being careful not to cut through the skin.
3. Slice down and across the pineapple flesh then scoop out the pineapple cubes with a spoon.
4. Discard the core and set the flesh aside.
5. In a large pan, heat the oil over a medium heat.
6. Add the chicken and season with the salt and pepper.
7. Fry for about 10 minutes, until browned and cooked through.
8. Take out the chicken and set aside.
9. Add the hoisin sauce, soy sauce, brown sugar, garlic paste and fry for a couple of minutes.
10. Stir in the chicken stock.
11. Bring to a boil and then simmer, stirring occasionally.
12. Once the sauce has thickened, add the chicken and stir until evenly coated with the sauce.
13. Serve in the empty pineapple halves, along with some rice and sesame seeds.
