Mochiko Flour :

INGREDIENTS:
2 cups mochiko flour
1 cup sugar
1 tsp baking powder
14 oz coconut milk
1/2 cup milk
2 eggs
vanilla essence
5 tbsp butter
Directions:
First melt the butter and set aside. Combine milk, coconut milk, eggs, melted butter and vanilla essence in a bowl. Mix to combine. In a separate bowl, combine mochiko, sugar and baking powder and mix well. Add in the wet ingredients and mix until well combined. Pour mixture into a square baking pan lined with parchment paper. Bake for 1 hour at 375 degrees F. Cut into squares and enjoy!

Purple Yam Flower Buns (Banh Mi Bong Khoai Lang Tim) Recipe
Ingredients:
2 lbs Purple Yam
2 1/2 cup Bread Flour
2 tsp. Active Yeast
1 Egg
2/3 cup Almond Milk
1/2 tsp. Salt
1/2 cup Sugar
2 Tbsp. unsalted Butter
Egg Wash
Black Sesame Seeds (optional)
Warm up 2/3 cup Almond Milk, about 95-110 degrees F. Add 2 tsp. Active Yeast. Mix and set aside.
In a large bowl add 2 1/2 cup Bread Flour, 1/2 cup Sugar, 1/2 tsp. Salt and mix.
Once the yeast activate add in the milk mixture, 1 Egg and 2 Tbsp melted unsalted Butter. Mix well and knead into a dough.
Cover with plastic wrap and place in a warm area until it doubles in size.
In the mean time wash 2 lbs. Purple Yam. Place in a steamer, steam until the yam are cooked. When a chopstick goes through the yam easily that's how you know it's done.
Remove from steamer. Let it cool a bit and peel the skin off. Place the yam in a bowl. Smash the yam together and set aside.
When the dough doubles in size, remove from bowl. Divide it into equal pieces. Take one piece, flatten it out, place some purple yam in the center and roll into a ball.
Lightly using a rolling pin, flatten it out a bit. Cut slits around the circle. Place on baking pan with parchment paper. Repeat until you used up all the dough and purple yam.
Cover with plastic wrap and let it doubles in size. Once it has double in size, spread some egg wash on it. Sprinkle some Black Sesame Seeds. Place in oven and bake at 350 degrees F
for about 12-15 minutes or until golden.

It wouldn't be Passover without tzimmes (pronounced tz-imm-es). This traditional Jewish stew is made from root veggies (sweet potatoes and carrots) mixed with dried fruit.
In a twist, this recipe replaces brown sugar with Our Wee Farm honey by @lorenzaponce and it takes on a Polynesian flair with the addition of tropical fruits.

Ingredients: Serves 8-10
2 lbs Sweet potatoes, peeled and cut into chunks
1-1/2 lbs Baby carrots
3/4 Cup Dried dates, pitted
1-1/2 Cups Mango, peeled and cut into chunks
1/4 Cup Golden raisins
1/4 Cup Brown sugar
3/4 Cup Water
1 8-ounce can Pineapple tidbits, with juice
1/3 Cup Honey
3 Tbsp Unsalted butter
2-1/4 Tsp Potato starch*
2 Medium Bananas, peeled and sliced
1. Preheat oven to 350deg F. Grease a 4 quart covered casserole dish or dutch oven.
2. Combine all ingredients into the casserole dish or dutch oven, except the potato starch and bananas.
3. Cover and bake for 45 minutes.
4. Remove 1/3 cup of liquid from the casserole dish or dutch oven. Stir the potato starch into the liquid, until incorporated.
5. Pour starch liquid into the other ingredients and add the bananas. Stir.
6. Return dish to oven to continue baking, uncovered, for an additional 45 minutes. Serve warm as a side dish.
7. Can be made up to 3 days ahead. Cover and refrigerate. Reheat at 325deg F for 30 minutes or until hot.
*If you are not making this for Passover, cornstarch can be used in place of potato starch.

Taro Rolls Recipe
Ingredients:
4 cups bread flour
1 cup sugar
2 ¼ teaspoons instant yeast
½ teaspoon salt
½ cup warm milk
1 cup poi
1 egg
1/2 cup butter, softened
1 tsp purple food coloring
Directions:
1. Prepare the dough: To a large bowl add flour, sugar, and yeast. Mix until well combined and set aside.
2. To the bowl of a stand mixer add ¼ cup milk, poi, egg, and butter. Using the paddle attachment mix until well combined. Then add purple food coloring and mix until the color is mixed through.
3. Remove the paddle attachment and replace with the dough hook.
4. Next add the flour mixture in sections. Mix until well combined. Slowly add the remainder of the milk mixture as needed. This will largely vary depending on the brand of poi and the humidity.
5. Knead the dough: Mix on medium speed for 10 minutes or until the dough is smooth. This is a wet dough. You can tell the mixture is done when you can touch the dough with clean hands and the dough does not stick to your fingers.
6. Shape the dough: Once the dough has been thoroughly mixed, divide the dough into 15 pieces. Form a smooth ball with each piece of dough.
7. Allow to rise: Spray a 9x13 baking dish with non-stick cooking spray or grease with butter or oil. Place the dough in 5 rows of 3. Cover with a dish towel and allow to rise until doubled in size. This will vary depending on the temperature and humidity.
8. Preheat the oven to 325F.
9. Bake the rolls: Once the dough has doubled, bake for 20-25 minutes or until the tops of the bread just begin to brown.
10. Allow to cool slightly and ENJOY!
