How To make Grilled Jumbo Shrimp with Citrus Sauce

MARINADE:
1/2 c Vegetable oil
Grated zest of 1 orange Grated zest of 1 lime 1 tb Fresh basil; minced OR
1/2 tb Dried basil
1 ts Fresh thyme; minced OR
1/2 ts Dried
1 lb Extra-large shrimp; about 18
-shells removed; cleaned
VEGETABLE SAUTE:
1 tb Vegetable oil
3 c Vegetable; (use artichokes,
-fennel, red bell pepper, -and zucchini) cut into -1/2-inch-wide sticks about -2 inches long 1 Clove garlic; minced
Salt and ground black pepper 3 tb Balsamic vinegar
CItrUS SAUCE:
1 tb Orange juice
1 tb Grapefruit juice
1 tb Lime juice
2 tb Honey
1 tb Dijon-style mustard
For the marinade, combine all the ingredients in a mixing bowl. Add the shrimp and marinate for about 3 hours. (Note the recipe states to marinate at room temperature, but I would not leave it out for that amount of time. The safest thing to do is to marinate in the refrigerator.) When the marinating time is over, make the vegetable saute. In a saute pan over medium heat, warm the oil. Add the vegetables and garlic; saute for 4 minutes, stirring constantly. Season with salt and pepper. Add the balsamic vinegar and continue cooking for 1 minute more. To make the citrus vinaigrette, combine all the ingredients in a mixing bowl. Whisk to dissolve the honey. Remove the shrimp from the marinade and grill or broil for 2 minutes on each side. Divide the sauteed vegetables among 6 salad plates, put 3 shrimp on top of each, and pour on the citrus vinaigrette. Source: Burt Wolf's Table Cookbook. Shared and MM by Judi M. Where's The Garlic? You can add garlic if u want. But it tasted so good I didn’t have to add the garlic. lol If u add garlic, u can add 1 clove of garlic.
Lemon-Herb Garlic Butter Shrimp Recipe
1 lb jumbo shrimp
avocado oil
salt to taste
pepper to taste
3-4 sprigs of fresh parsley
1 sprig of fresh oregano
1sprig of fresh thyme
1 sprig of fresh rosemary
1/2 lemon zest
4 tbsp butter
INSTRUCTIONS
Add a 1/2 stick of butter to a bowl
Finely chop the parsley, oregano, thyme, and rosemary
Zest a lemon
Add the chopped ingredients to the butter along with the lemon zest
Add a pinch of salt and pepper
Combine all of the ingredients using the back of a spoon.
Season the shrimp lightly with salt, ground black pepper, and combine.
Add oil to a skillet, and once the skillet becomes hot add the shrimp.
Cook on both sides until the shrimp become pink.
Add the herb-infused compound butter to the shrimp during the last 1-2 minutes of the cooking process and combine.

INGREDIENTS
2 lbs. (907 g) Freshwater Prawns (or large head-less shrimp)
2 Tablespoons (30 ml) Grapeseed oil (or other high-flash point oil)
1/2 cup (1 stick or 115g) unsalted Butter
6 cloves Garlic , crushed
1 chopped or crushed thai chili , optional for spicy version
2 teaspoons (5 ml) Fish Sauce , or soy sauce
1 teaspoons (5 ml) citrus zest of 1 medium lemon , or 1 lime
1 Tablespoon fresh lemon or lime juice
1/2 teaspoon salt , or to taste
1/4 teaspoon fresh cracked black pepper , or to taste
1 Tablespoons chopped green onion
lemon or lime wedges , for serving
