Lemon Grilled Chicken With Cucumber Yogurt Sauce

For the chicken marinade:
Combine:
2-4 tbs olive oil
2-4TBS chicken bone broth
Juice 2 lemons
Lemon zest
2TBS oregano
1TSP sea slat
1TSP black pepper
Add chicken breasts and mix until well coated. Refrigerate for 4-24 hours.
Grill 3 min each side on medium heat, add sliced lemons, then grill another 3 min on each side.
For the Yogurt Sauce:
Combine:
1C Greek yogurt
1 chopped cucumber
2 chopped garlic cloves
Lemon zest
Juice 1 lemon
2TBS dill
1TSP sea salt

BBQ Sauce:
-Tomato ketchup ½ Cup
-Brown sugar powdered 3 tbs
-Sirka (Vinegar) ½ tsp
-Worcestershire sauce 2 tbs
-Namak (Salt) 1 pinch
-Kali mirch powder (Black pepper powder) ½ tsp
-Paprika powder 1 tsp
-Mustard powder 1 tsp
-Koyla (Charcoal) for smoke
Thousand Island Sauce:
-Mayonnaise 1 Cup
-Tomato ketchup ½ Cup
-Pickled cucumber finely chopped ½ tbs
-Pyaz (Onion) finely chopped 1 tbs
-Chili sauce 1 tsp
-Namak (Salt) 1 pinch
-Sirka (Vinegar) ½ tsp
-Kali mirch powder (Black pepper powder) ½ tsp
Garlic Yogurt Sauce:
-Dahi (Yogurt) ½ Cup
-Cream ½ Cup
-Namak (Salt) 1 pinch
-Lehsan (Garlic) clove 1
-Cooking oil 2 tsp
-Lemon juice 1 tbs
Directions:
BBQ Sauce:
-In bowl,add tomato ketchup,brown sugar,vinegar,worcestershire sauce,salt,black pepper powder, paprika powder,mustard powder and whisk until well combined.
-Give a charcoal smoke for 2-3 minutes.
-Can be stored in refrigerator for up to 1 week.
Thousand Island dressing:
-In bowl,add mayonnaise,tomato ketchup,pickled cucumber,onion,chili sauce,salt,vinegar,black pepper powder and whisk until well combined.
-Can be stored in refrigerator for up to 2-3 days.
Garlic Yogurt Sauce:
-In blender,add yogurt,cream,salt,garlic,cooking oil,lemon juice and blend until well combined.
-Can be stored in refrigerator for up to 2-3 days.

Grilled Spicy Herb Chicken with Cucumber-Garlic Yogurt Sauce
Prep: 10 minutes plus marinating Grill: 16 minutes Serves: 4
4 garlic cloves, coarsely chopped
2 small jalapeño peppers, chopped
¾ cup olive oil
½ cup packed fresh cilantro leaves
½ cup packed fresh Italian parsley leaves
½ cup packed fresh mint leaves
1½ teaspoons kosher salt
¾ teaspoon cracked black pepper
½ teaspoon grated fresh ginger
½ teaspoon ground cumin
1¼ pounds boneless, skinless chicken breasts
¾ cup plain Greek yogurt
½ cup seeded and chopped English cucumber
1. Prepare outdoor grill for direct grilling over medium-high heat. In blender, purée ½ the garlic, jalapeño, oil, cilantro, parsley, mint, 1 teaspoon salt, black pepper, ginger and cumin; reserve 2 tablespoons. Rub chicken with remaining herb mixture; cover and refrigerate 30 minutes.
2. In blender, purée yogurt, cucumber, and remaining ½ the garlic, ½ teaspoon salt and reserved herb mixture. Makes about 1⅓ cups.
3. Place chicken on hot grill rack; cook 16 minutes or until internal temperature reaches 165°, turning 3 times. Slice chicken; serve topped with yogurt sauce.
