How To make Grilled Angel Food Cake with Nectarines & Blueberries
6 Ripe nectarines
3 tb Powdered sugar
Grated zest of 1 lemon Juice of 1/2 a lemon 6 sl Angel food cake
1 pt Fresh blueberries
Prepare grill & cover to build an intense heat. Remove nectarine pits & slice each one into 6 slices. Combine sugar, zest, lemon juice in a small bowl. Place 6 nectarine slices on a skewer & place on grill. Cook 5 minutes, turn & baste with glaze. Cook & baste for another 7 minutes. When fruit is just about done, toast cake slices on a cooler part of the grill, turning once. Serve toasted cake with grilled nectarines & handfuls of blueberries. "Vegetarian Times" July, 1993

Grilled cheese sandwiches with a twist followed by angel food cake with whipped cream and berries
On one of the hottest days of the year we decided to grill up some grilled cheese sandwiches with a twist followed by a delicious light angel food cake with whipped cream and berries.
Grilled Cheese with a twist:
Preheat skillet over medium heat. Generously butter one side of a slice of bread. Place bread butter-side-down onto skillet bottom and add 1 slice of cheese of your choice along with any other toppings. Butter a second slice of bread on one side and place butter-side-up on top of sandwich. Grill until lightly browned and flip over; continue grilling until cheese is melted. Repeat with remaining 2 slices of bread, butter and slice of cheese.
Angel Food Cake:
We choose to keep it simple and just use a cake mix for this recipe and follow the instructions on the back. Cool upside down until completely cooled. Top with whipped cream and an assortment of berries. Cut with serrated knife, using sawing motion and enjoy!!!

Grilled Pound Cake with Berries and Smoked Whipped Cream
1 Pound Pound Cake (sliced into ½ inch slices)
1 Hickory Wood Chunk
1 Cup Strawberries, quartered
1 Cup Blackberries, cut in half
¼ Cup Sugar
2 Cups Smoked Whipped Cream
1 Sprig Mint
Smoked Whipped Cream
2 Cups Heavy Whipping Cream
2 Tbsp Powdered Sugar
¼ tsp Vanilla Extract
Dish Method:
1. Stabilize your grill at 500F. Place 1 deflector shield in so your grill is half direct and half indirect.
2. Place the hickory wood chunk in the hottest portion of the coals to achieve clean smoke, then top the grill off with 2 grill grates positioned at the highest portion of the Divide and Conquer system.
3. As the grates come to temperature and the smoke cleans, top the cut berries with the sugar and allow to marinate for 10 to 15 minutes.
4. Place the sliced cake on the direct side of the grill and slightly toast and smoke sear. Flip for even color, then transfer to the presentation plate in a shingled design.
5. In a mixing bowl, add the heavy cream. Using a whisk, whip until it comes to a soft peak. Add the powdered sugar and vanilla extract. Whip until fully incorporated and the whipped cream comes to a stiff peak. Then, place on the indirect side of the grill and close the dome. Allow the whipped cream to smoke for 1 minute. (Just enough time to pick up some smoke, but not heat up and separate.)
6. While the whipped cream is picking up smoke, drape the berries and liquid over the grilled and shingled pound cake.
7. Remove the whipped cream and place a large dollop on the side of the dish, garnish with mint. Enjoy!

A great simple desert that you can cook on your grill.

Grilled Peach Pound Cake:
Recipe makes 12 Servings
1 Pt heavy whipping cream, well chilled
2 Tsp confectioners sugar
1/2 Tsp ground ginger
6 fresh peaches, sliced in half
1 Tbsp olive oil
2 Tbsp brown sugar
1 loaf frozen pound cake
4 Tbsp salted butter, softened
1 Pt fresh blueberries
1 Tbsp fresh mint, finely chopped
Instructions
1.To prepare whipped topping: In a medium sized bowl, add cream and whip with an electric hand mixer for 4 to 5 minutes, or until it starts to get fluffy. Add confectioners sugar and ginger. Continue beating until fully whipped with stiff peaks. Place in refrigerator until ready to use.
2.Heat grill to medium high heat.
3.Coat peach halves evenly with oil and brown sugar. Once grill is hot, grill peaches on each side just long enough to leave marks, and peaches begin to soften and caramelize. Remove from grill, cut into slices and set aside.
4.Slice pound cake into 3/4 inch thick slices. Spread softened butter on both sides of each slice. Grill briefly on both sides until toasted.
5.Top pound cake with peaches, fresh blueberries and ginger whipped cream. Garnish with fresh mint and serve immediately.
