How To make Greek Style Red Snapper
2 lb Red Snapper fillets
1 lg Red onion,thinly sliced
2 ts Oregano leaves
4 tb Lemon juice
4 tb Minced fresh parsley
1 lg Tomato,cored and chopped
1/2 c Crumbled Feta or Blue cheese
Place fish in a lightly oiled baking dish.Lay onions over fish and sprinkle with oregano and lemon juice. Mix together parsley and tomatoes and spread over fish, then sprinkle with cheese. Cover tightly with foil and place in a preheated 350 degree oven for 25 to 30 minutes or until fish flakes easily with a fork. Serves 4.

* 2 & 1/2 pound red snapper fish
* 1/4 tsp of crushed white pepper
* 1/4 tsp of granulated garlic
* 1/4 tsp of salt or season to your preference
* gallon peanut oil for deep frying (substitute with avocado oil or vegetable oil)
INGREDIENTS FOR SALSA/ PICO DE GALLO:
* 1 cup chopped tomatoes
* 1/2 cup chopped onion
* 1/2 cup chopped jalapeños (seeded)
* 1/2 cup chopped red bell pepper
* 1/4 cup cilantro
* 2 Tbsp lemon or lime juice
INGREDIENTS FOR GARLIC AND CHILI INFUSED OIL:
* optional 3 cloves garlic thinly sliced
* optional 6 small Thai chilis
* optional 3 Tbsp vegetable or olive oil

Whole fish is the most flavor that you will get from fish and this vid is a greek recipe for how to cook whole fish - this applies to speckled trout, snapper, striped bass (rockfish), sheepshead, flounder, and numerous other species. In this video we cook up a whole speckled trout greek style.
Feel free to add your own seasonings but here is what we used to season and cook this fish with:
Onions
Grape Tomatoes
Garlic Cloves, minced
Parsley
Rosemary
Thyme
Lemon
Olive Oil

Now, how to cook it! Always make sure you purchase fresh fish from your local trusted fishmonger. This snapper was caught locally near San Remo in Victoria's Port Phillip Bay and cooked the next day!
Paste it with a little olive oil, plenty of salt and pepper and oregano and place it on a very hot grill. This will ensure the skin lifts nicely when it is time to turn it over.
Get your plate ready, a cold beer on the side and enjoy your meal with friends or family. Opa!
How to Roast a whole Fish: Lavraki: Mediterranean Sea Bass with Lemony Potatoes
Get the recipe:
Ingredients
2 pounds Mediterranean Sea Bass
salt, to taste
freshly cracked black pepper to taste
olive oil
For the Ladolemono dressing:
1/4 cup fresh lemon juice
1/2 cup olive oil
1 teaspoon dried oregano
2 garlic cloves, grated
1 teaspoon mustard (optional)
Instructions
Preheat the oven to 400 °F, 200 °C.
Cut slits on the exterior of the fish (both sides).
Drizzle olive oil on top and inside the fish and season with salt and pepper.
Place the fish on a baking tray lined with foil or parchment paper.
Roast for 20 minutes.
Place all of the ladolemono dressing ingredients in a bowl and whisk together until creamy and emulsified.
Serve the dressing alongside the fish along with bread and lemon wedges. Kali Orexi!.
