This is a delicious rustic and authentic winter Greek dish, made with braised beef stew & sweet onions. It's one of the most favorite dishes for Greek people. The word Stifado comes from the ancient Greek word tifos meaning steam. Originally the recipe was brought to Greece in the 13th century by Venetians. It's the perfect dish for the winter months & Sunday special family lunch.
That's where Stifado becomes the table's center piece with Salad, Fries & good strong red wine! A great serving idea would be to present Stifado in small Terracotta dishes, adding to the whole rustic, country experience.
This dish can be made w/a variety of meats, like rabbit, beef & even octopus! However, Onions are quite important in this recipe, so look out for a tip how to easily clean them and not cry!
Serves 3-4 persons
Ingredients:
600 gr. Beef Lean Rump Steak (boneless)
1 kg. Shallots (Baby Onions)
1-2 Garlic Cloves
Salt and Ground Pepper
1 fresh ripe Tomato chopped
1 tbsp. Tomato Paste (puree)
400 gr. tin Tomato blocks with basil
100 ml. Strong Red Wine (like Xinomavro)
50 ml. White Vinegar
1/2 tsp. Ground Nutmeg
1&1/2 tsp. All-Spice
Olive or other oil
1&1/2 tbsp. Sugar
2-3 Bay Leaves
Μοσχάρι Στιφάδο
Σερβίρει 3-4 άτομα
Πρόκειται για ένα νόστιμο, αυθεντικό χειμερινό ελληνικό πιάτο, φτιαγμένο με μοσχαρίσιο κρέας και γλυκά κρεμμύδια. Είναι ένα από τα πιο αγαπημένα πιάτα για τους Έλληνες. Η λέξη Στιφάδο προέρχεται από την αρχαία ελληνική λέξη τύφος που σημαίνει ατμός. Αρχικά η συνταγή ήρθε στην Ελλάδα τον 13ο αιώνα από τους Ενετούς. Είναι το τέλειο πιάτο για τους χειμερινούς μήνες και ένα ξεχωριστό μεσημεριανό γεύμα της Κυριακής για την οικογένεια. Εκεί το Στιφάδο γίνεται το κεντρικό σημείο του τραπεζιού με σαλάτα, φρέσκες τηγανιτές πατάτες και καλό δυνατό κόκκινο κρασί! Μια όμορφη ιδέα σερβιρίσματος θα ήταν να σερβίρετε το Στιφάδο σε μικρά πήλινα πιάτα, προσφέροντας έτσι όλη την ρουστίκ, χωριάτικη εμπειρία.
Αυτό το πιάτο μπορεί να γίνει με μια ποικιλία κρεάτων, όπως κουνέλι, βοδινό κρέας και ακόμη και το χταπόδι! Τα κρεμμύδια είναι πολύ σημαντικά σε αυτή τη συνταγή, οπότε κοιτάξτε και την συμβουλή μου πώς να τα καθαρίσετε εύκολα χωρίς να κλάψετε!
Υλικά:
600 γρ. Μοσχαρίσιο κρέας (Σπάλα ή Ελιά από μοσχαράκι γάλακτος)
1 kg. Κρεμμύδια μικρά (κοκκάρια)
1-2 σκελίδες σκόρδο
Αλατοπίπερο
1 φρέσκια ώριμη Ντομάτα ψιλοκομμένη
1 κ.σ. Τοματοπολτός (πουρέ)
400 γρ. κονσέρβα ντοματάκια σε μπλόκς με βασιλικό
100 ml. δυνατό κόκκινο κρασί όπως Ξινόμαυρο
50 ml. Λευκό ξύδι
1/2 κ.γ. μοσχοκάρυδο
1 & 1/2 κ.γ. Μπαχάρι
Ελαιόλαδο ή άλλο λάδι για το μαγείρεμα
1 & 1/2 κ.σ. Ζάχαρη
2-3 φύλλα Δάφνης

Stifado is a great dish to slow cook and I've included a few shortcuts to make it easier for a busy family household. Stifado roughly translates as a stew with lots of onions! If you want to go really native you can replace the beef with rabbit or even octopus but beef has always been a very popular version (and cheap!).
Tip 1: If you want to use more beef simply increase the amount of onions by the same - the meat and onions should be of equal portions.
Tip 2: If you haven't got time to peel all the baby onions you can replace with the same quantity of sliced white onions (although traditionally baby onions are best)!
Beef Stifado Recipe:
Ingredients (serves 4)
■extra virgin olive oil
■500g stewing beef (chopped into 2inch square pieces give or take)
■500g baby onions
■sugar (just a pinch)
■6 new potatoes (about a handful), halved
■130g chopped tomatoes (1/3 of a tin)
■1 tbsp tomato puree, heaped
■1 tbsp ground cumin
■½ tbsp cinnamon, ground
■3 cinnamon sticks (about 2 inches long)
■nutmeg (a few grates), grated
■3 bay leaves
■garlic (3x cloves), sliced
■12 black peppercorns (whole)
■5 whole cloves
■60ml red wine vinegar
■90ml red wine
■500ml stock (or water)
■fresh parsley (to garnish), chopped
Method:
1.Preheat oven to 170'C (if using) or slow cooker to LOW
2.In a hot pan add a drizzle of extra virgin olive oil and sear the stewing beef to give some colour - do it in batches so not to overcrowd the pan
3.Once browned set aside
4.In the same pan add enough oil to cover the base of the pan (part of this dish is about enjoying the flavour of the extra virgin olive oil so don't hold back!) and add your onions, a small pinch of sugar and fry until the onions start to caramelise
5.Then add all the dry ingredients (except the parsley) and fry for a minute before adding the vinegar and wine
6.Bring to the boil, then add your beef and any juices back into the pan, pour in enough stock to just cover the ingredients
7.Pop in the oven for 3 hours or slow cooker for 6 hours (or as instructed for stewing steak by the manufacturer)
8.Once cooked, remove from the oven, add the chopped parsley, season and serve!
9.Goes well with rice or if you've added lots of new potatoes just put it straight in a bowl

A Comforting Greek Stew: Lamb & Cabbage

Ingredients
3 and 1/2 pounds (1.5 kg) lamb
1 large head of green cabbage, chopped
1/4 cup olive oil
2 onions, finely chopped
5 garlic cloves, grated
2 teaspoons salt, or to taste
1/2 teaspoon freshly cracked black pepper, or to taste
15 oz (425g) crushed tomatoes
1 teaspoon dried thyme
lemon wedges
Instructions
Heat a large pot over medium-high heat and add the olive oil. Season the meat on both sides with a little salt and black pepper. Brown the lamb in a few baches as to not overcrowd the pan.
Alternatively brown the lamb in the air fryer at 400 °F, 200 °C for 20 minutes. Flip the lamb over halfway through.
Add the onions to the pot and warm through 2-3 minutes. Add the garlic and warm through until fragrant.
Add all of the browned lamb to the pot aong with the salt, pepper, crushed tomatoes, a cup of water, and thyme. Cover the pot with the lid and cook over medium heat for about an hour or until tender and until the sauce has thickened.
Add the cabbage to the pot. Season it lightly with salt and pepper.
Cook over medium-high heat for about 20 minutes or until wilted.
Taste and adjust the seasoning if needed.
Serve with toasted bread and some lemon wedges. Kali Orexi!
