Cream Cheese Filling:
6 oz cream cheese
1/4 cup powdered sugar
Cookies:
1 cup softened butter (226g)
3/4 cup white sugar (150g)
1/4 cup brown sugar (50g)
1 egg
1 tsp vanilla extract (teaspoon)
1tsp baking soda (teaspoon)
1/4 tsp salt (1.5g)
2 3/4 cup all-purpose flour (335g)
1/2 cup fresh (small diced) strawberries (85g)

CHOCOLATE CUPCAKE RECIPE
Makes 12

INGREDIENTS:
Ingredients:
2 Tbsp (30ml) Dark Chocolate Chips
½ cup (50 g) unsweetened Cocoa powder
½ cup (120 ml) hot water
1 cup (200 g) of sugar
½ cup (120 ml) vegetable oil
2 eggs
1 ½ (7.5 ml) tsp vanilla
2/3 cups (80 g) of flour
¾ tsp (8.75 ml) salt
½ tsp (2.5 ml) baking soda
Chocolate Cream Cheese Frosting:
16 oz (450g) whipped cream cheese
1½ cup ( 170g) powdered sugar
4 Tbsp (25g) Unsweetened Cocoa Powder
3/4 cup (177ml) heavy cream
1 tsp (5 ml) vanilla
Dark Chocolate curls for garnish I used this chocolate bar from Trader Joe's
METHOD:
Preheat oven to 350F (175 C) degrees. Line a 12-well muffin tin with cupcake papers.
In a large heat safe bowl, add the chocolate chips and the cocoa powder. Then pour the hot water over the top to combine. Add the sugar and oil, whisk to combine. Add the eggs and whisk until smooth. Add the vanilla. Set aside.
In a smaller bowl sift together the flour, salt and baking soda. Add the dry ingredients to the chocolate mixture, in thirds, stirring gently with a wire whisk until combined.
Fill the cupcake wells ¾ of the way full. Bake 17 mins or until a toothpick comes out clean. Allow cupcakes to cool completely before frosting.
To make the frosting combine cream cheese, cocoa powder and powdered sugar in a bowl and with an electric mixer beat until combined. Add heavy cream and vanilla and beat until smooth and creamy.
Fit a pastry bag with your favorite star tip, pipe frosting, and garnish with chocolate curls made with a potato peeler and a dark chocolate bar.
STRAWBERRY CUPCAKE RECIPE
Makes 12

INGREDIENTS:
2 eggs
¾ cup (180 ml) melted butter
¼ cup (60 ml) vegetable oil
1/2 cup (120 ml) water
¾ cup (150g) sugar
1 tsp (5 ml) vanilla extract
1 ¾ cup (210 g) flour
1 tsp (5 ml) baking powder
½ tsp (2.5ml) salt
1 cup (150g) fresh strawberries, diced
Strawberry Frosting:
16 oz (450g) whipped cream cheese
2/3 cup (65g) powdered sugar
1 package (1.2 oz/34g) of freeze-dried strawberries. I like this brand:
1/3 cup (79ml) heavy cream
Fresh strawberries for garnishing
METHOD:
Preheat oven to 425F (218C).
In a large bowl mix together the butter, oil, eggs, water, sugar, and vanilla extract. Set aside.
In a medium-sized bowl whisk together the flour, baking powder, and salt. Add the dry ingredients to the wet ingredients, in thirds, until combined. Then fold in the strawberries.
Scoop batter into muffins tins lined with muffin papers 2/3 of the way full. Bake 16-18 mins until golden brown and risen.
For the frosting:
Pulse the entire bag of dehydrated strawberries in a food processor until a dust forms. Add the cream cheese, powdered sugar and 1 tbsp (15ml) of the strawberry dust -for light pink, or the entire quantity for Dark pink. NOTE: If not using all the strawberry dust save it for pancakes or smoothies!
Beat the mixture until smooth, then slowly add the heavy cream and beat until smooth and creamy. Transfer the frosting to a pastry bag fitted with a star tip, and pipe onto the cupcake. Slice a ripe strawberry in half vertically, and garnish with the sliced strawberry, cut side facing out.

Ingredients: I’m using a 9x13 baking dish baked at 350 for 25 minutes if you use Betty Crocker cake mix bake for 28 minutes don’t overbake your cake it will be flaky and dry and not melt in your mouth!!!!!!!
1 box cake mix along with its ingredients
Milk mixture:
12 oz evaporated milk
6-8 oz condensed milk
3/4 cup milk
3/4 cup strawberry pie filling
Whipped topping:
3 cups heavy cream
1/4 cup sugar add more if you want it sweeter
2 tsp vanilla extract

This cake is all things strawberry shortcake, but with an added addition of cornmeal, you get this amazing texture that cannot be beat. I have made this a few times now and every time it turns out tasting great. And what better time to user cornmeal than THANKSGIVING!

75 grams yellow cornmeal
240g buttermilk
1 tsp vanilla extract
200g all-purpose flour
1 tbsp baking powder
1/2 tsp baking sodoa
1/2 teaspoon Kosher salt
150g sugar
2 tsp lemon zest (1 lemon)
10 tbsp unsalted butter
2 large eggs
2 tbsp powdered sugar (I added the the cream)
1 tsp vanilla extract (I added the the cream)

Easy Strawberry Shortcake Cupcakes Recipe

Just like classic strawberry shortcake these cupcakes are super light and makes the perfect end to a grilled dinner!
I love that they are super easy and portable. They pack in all the flavors of a strawberry shortcake! Matter of fact, I've had people that don't like strawberry shortcake but still love these cuties! They are a true crowd pleaser!
The strawberry cream frosting is amazing! I could seriously eat this stuff alone! We think it taste like a strawberry cream cheesecake! The vanilla whipped cream cupcakes bakes up super fluffy, but firm and spongy enough to hold up to that fresh strawberries and cream frosting!
