How To make Vegetarian Strawberry Shortcake
SHORTCAKE:
1/4 c Tofu
3 tb Sugar
1/2 c Shortening
1 ts Salt
1 tb Baking powder
1/2 ts Cream of tartar
2 c Flour
1/2 c Water
TOPPING:
Strawberries, as needed Sugar, optional Preheat oven to 450F. Cream together the tofu, sugar & shortening. Add the remaining dry ingredients in order, mixing well after each addition. Add the water, you may need to add more to ensure that you have a fairly sticky dough. Wet your hands & knead the dough until it is well mixed. Transfer to an oiled 8 1/2" round baking dish. Bake in the preheated oven for 15 to 20 minutes. Let cool for 5 minutes or so & turn out onto a wire rack. Slice strawberries. If desired, toss with a couple of tablespoonfuls of sugar. Spoon over the still warm shortcake. Serve imemdiately.

Strawberry shortcake is an American staple. As the days get longer and the summer sounds fill the air, there is hardly anything more delicious than a serving of Strawberry Shortcake. This is what I am making for Father’s Day. It is one of my favorite desserts, and it is surprisingly simple to make. I love the combination of cake, strawberries and whipped coconut cream, and an absolute bonus is that it looks so beautiful. Happy Father’s Day to all the fathers out there.

Vegan Strawberry Shortcake | Sweet and Simple Spring Dessert
This Sweet and Simple Vegan Strawberry Shortcake is the perfect spring dessert recipe for any occasion – Easter, birthday, a picnic, or just a special treat! Scrumptious strawberries with a super simple shortcake recipe make for a super easy, super delicious dessert.
Warning: This is definitely not a diet recipe!????
But it IS Deeeeeelicious!
Also, it’s a little different than your average strawberry shortcake because instead of being small, individual cakes, it is more like a traditional layer cake. Which for me, makes it perfect for a birthday!
Speaking of birthdays…. When I made this last weekend to film, my son liked it so much that he not only ate half the cake in less than 24 hours, but he requested it for his birthday the following weekend! It’s that good!

Ingredients:
6 tbsp vegan butter (cold)
1 1/2 cups all-purpose flour
2 tbsp baking powder
1 tsp salt
3 tbsp coconut sugar
1/2 cup non-dairy milk
1 tbsp apple cider vinegar
1-2 cups strawberries (sliced)
1 can coconut cream
Maple syrup
Sugar
Pinch of salt
Recipe:
1) Preheat oven to 425 degrees and prep your baking sheet with parchment paper.
2) Add all dry ingredients and vegan butter in food processor and pulse until mixed. (Pulse 3-4 times). If mixing by hand just mix all dry ingredients by hand. The mixture should be very crumbly. DO NOT OVER MIX DOUGH!
3) Combine milk and apple cider vinegar and wait for it to curdle. This will be your vegan buttermilk!
4) Pour buttermilk over the dry mix and pulse for about 3 times. DO NOT OVER PULSE. The dough should still be crumbly, but wet! DO NOT OVER MIX DOUGH!
5) Transfer the dough to a lightly floured surface and form the dough into a ball.(If it is too sticky add more flour). Once it is formed into a ball, roll it out with a rolling pin until it's about 1 inch thick. Cut with a cookie cutter!
6) Brush biscuits with your milk and butter wash and then bake for 15 minutes or until brown.
7) Prep your strawberries by adding sugar and maple syrup. Mix and set aside.
8) For your coconut whip cream combine coconut cream and maple syrup in a mixing bowl. With an electric mixer mix until fluffy.
9) Put together your shortcake and enjoy!
