This week on Basics, I'm showing you how to make the meatiest chili con carne and the best ever vegetarian chili. Both use chili paste that you can make from scratch.

+ For the chili con carne:
2 pasilla chiles (dried whole)
4 arbol chiles (dried whole)
4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)
1 whole chuck roast
Vegetable oil
1 white onion, roughly chopped
6 cloves garlic, crushed
4 cups chicken stock
Cinnamon
Ground allspice
Ground coriander
Dried oregano
2-3 Tbsp tomato paste
2-3 Tbsp masa harina
2 limes, juiced
Shredded cheese, for garnish
+ For the vegetable stock:
1 white onion
4 ribs celery
1 bulb fennel
1 parsnip, peeled
3 carrots
1 leek
1 small head cauliflower
2 beets
Vegetable oil
Sprigs of fresh thyme
Small head of garlic, halved
1 bunch parsley
2 dried bay leaves
1 Tbsp whole black peppercorns
1 handful dried porcini mushrooms
2 sheets dried kombu
+ For the vegetarian chili:
2 pasilla chiles (dried whole)

4 chipotle chiles (dried whole)
3 guajillo chiles (dried whole)
3 ancho chiles (dried whole)
2 dried porcini mushrooms
3 poblano peppers
3 jalapeno peppers
2 large onions, roughly chopped
Olive oil
6-7 cloves garlic, roughly chopped
2-3 Tbsp tomato paste
3 tsp toasted cumin
Ground coriander
Dried oregano
1 can cannellini beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 can pinto beans, drained and rinsed
14oz can diced tomatoes
14oz can fire-roasted diced tomatoes
1 tsp liquid aminos
2 Tbsp nutritional yeast
3 cups vegetable stock (ingredients above)
Sour cream and sliced jalapenos, for garnish

TEXAS CHILI RECIPE AWARD WINNING INGREDIENTS
2 - 3 lbs beef, diced with fat and gristle removed (I’m using short ribs, you could also use chuck, sirloin, ground beef)
Dried chilis - I’m using 2 guajillo, 1 ancho and 1 pasilla
3 cups beef broth
2 tablespoons cumin
1 tablespoon coriander
1 tablespoon paprika (I’m using smoked paprika)
1 large onion, diced
3 cloves garlic, minced
4 slices bacon
2 tablespoons tomato paste
2 tablespoons worcestershire sauce
2 14-oz cans diced tomatoes
2 chipotles and 1 tablespoon adobo sauce (from 1 can of Chipotle Peppers in adobo sauce)
3 tablespoons masa harina
Salt and pepper for seasoning beef
Homemade Chili Toppings Suggestions
Corn Chips, like Fritos
Cheddar Cheese, shredded
White Onions, minced
Jalapenos, sliced
Sour Cream
Cilantro, chopped
Select the dried chili you’ll be using, and remove the stems and seeds. Toast the chilis in a dutch oven or heavy bottomed pot for 2 minutes. Add the beef broth, bring to a boil and simmer to soften the chilis, about 15 minutes.
While the chilis are simmering, measure out the dried spices and cut the onions and garlic. Trim the beef of fat and gristle. Cut into bite sized pieces and season with salt and pepper.
Puree the stock and chilis in a Nutribullet, blender or food processor.
Cut the bacon into ½ inch pieces and cook in the dutch oven, rendering the fat and crisping the bacon. Remove the bacon pieces, leaving the fat in the pot. Over medium heat, cook the beef without stirring to sear. Once one side is seared, turn to sear the other. Work in batches so the pieces are not crowded - if the beef is crowded together, it will just steam the meat.
Once all of the beef is seared, with the heat still on medium, add all of bacon and beef to the pot. Add the dried spices and pureed liquid and cook for about 5 minutes.
From a can or jar of chipotle peppers in adobo sauce, add 2 chipotle peppers and 1 tablespoon of adobo sauce. Add the onions and garlic, cooking to soften, about 10 minutes. Add the tomato paste and stir. Add the Worcestershire sauce. Add the diced tomatoes and 2 cups of water and stir. Add the masa harina and stir.
Simmer for 2 - 3 hours until the meat is tender. Taste and adjust the spices to your level of spice intensity. Dried peppers can vary in spiciness, and you’ll be able to kick it up even more if you like. For a direct hit of heat, I like to use Paul Prudhomme’s Chipotle Chili Pepper - it can be intense, so start with slowly and build to your heat tolerance.
To serve, add corn chips, cheddar cheese and any additional toppings of your choice. We like to add sour cream on top, because we like it spicy and the sour cream helps tame the heat a little.
Texas Chili Recipe Slow Cooker
Once you've seared the beef, you can combine all of the ingredients in a slow cooker and cook on high for 4 hours or low for 8 hours.

2.25 lbs Ground Beef (80/20 or 85/15)
4 cloves minced garlic
1 diced onion
2 large jalapenos
1/2 red bell pepper
1/2 green bell pepper
3-4 slices of thick cut bacon (optional)
4 oz black beans
15 oz kidney beans
smoked paprika, ancho chile powder, chipotle chile powder (to taste 1/4 tsp or so)
cinnamon sugar (to taste)
salt, pepper, garlic, onion powder
6-8 oz mexican beer or chicken stock
1 tbsp better than bouillon chicken or beef base
2 tbsp tomato paste
worcestershire sauce & hot sauce (to taste)
14oz can crushed tomatoes
8oz can tomato soup
14oz fire roasted diced tomatoes
3 dashes of liquid smoke
2-3 tbsp brown sugar (if needed)
Cayenne pepper (as needed for heat)
Directions:
Start by adding a bit of cooking oil and your 3 slices of thick cut bacon. Once bacon begins to get crispy, remove it and add the ground meat directly to the pot. Once browned, begin adding your seasonings as seen in the video. Next, add in your diced veggies and mix to incorporate. Deglaze the pot with your beer or chicken stock. Bring to a boil and then reduce to a simmer. Begin adding in your tomato products and beans and cover to simmer for 30-60 minutes stirring occasionally (do not let anything stick to the bottom and burn! heat should be on low) Taste for seasoning and add whatever you feel it needs (more spice - add cayenne or hot sauce... add brown sugar or cinnamon sugar to sweeten if desired) Total cook time should be around 2 hours to allow all of the flavors to come together. Serve with your favorite chili toppings and enjoy!
