SMOKED GLAZED CHICKEN RECIPE INGREDIENTS :
Whole chicken with skin 1 kg
Onion 1
Jalapeno sliced 2 tbsp
Soya sauce 2 tbsp
Cinnamon powder ½ tsp
Thai red chilies 1 tbsp
Garlic 6 cloves
Vinegar ¼ cup
Oregano 2 tsp
Paprika 2 tsp
Sugar 2 tsp
Lemon juice 1 tbsp
Oil 1/3 cup
METHOD :
Blend all together into a paste and marinate the chicken overnight and bake the chicken kept in foil for 40 mins, open foil, and grill the chicken on both sides to give color. Serve with Moroccan rice and salsa.
MOROCCAN RICE RECIPE INGREDIENTS :
Oil ¼ cup
Chopped onion ½ cup
Bay leaf 1
Cinnamon 1 stick
Cardamom 4
Cloves 4
Ground cumin 1 tsp
Crushed black pepper 1 tsp
Salt 1 tsp
Rice 2 cups
Stock 3 cups
Saffron ¼ tsp
Sliced carrot julienne ½ cup
Roasted almonds fried 2 tbsp
Apricots chopped 2 tbsp
METHOD :
Heat oil, sauté whole spices and onion, and add seasonings and stock, when stock boils, add soaked rice, when water dries, add fried dry fruits and leave it on dum.
Ingredients for Salsa :
Tomatoes chopped 4
Onion chopped 1
Garlic cloves chopped 2
Capsicum chopped ½
Jalapeno chopped 2
Coriander leaves finely chopped 4 tbsp
Tomato paste 2 tbsp
Lemon juice 2 tbsp
Roasted and crushed cumin 1 tsp
Salt ½ tsp
Crushed red chilies 1 tsp
METHOD FOR SALSA :
In a bowl add tomato paste, lemon juice, crushed cumin, chilies, salt, and ½ cup water, mix all together, add all chopped vegetables, mix well, and keep in the fridge for 2-3 hours
TO SERVE :
Put chicken butterflied, cut on one corner, salsa in one small bowl, sour cream in another bowl, put rice in one corner, and decorate the top of rice with a fresh basil leaf.

Basic cooking and glazing of Vegetables

A classic French method of cooking carrots on the stovetop in one pan. The carrots cook in water and butter until the liquid has all but evaporated and results in perfectly tender carrots with a glossy buttery coating. Parsley brings bright fresh aromatics and a twist of black pepper and sea salt finishes this simple and splendid side dish.
Ingredients:
Carrots
Water
Butter
Sugar
Thyme
Honey
Parsley
Sea salt and Black Pepper
HONEY GLAZED GRILLED CHICKEN
PREP TIME: 2 HOURS 10 MINUTES
COOK TIME: 40 MINUTES
SERVES: 2
INGREDIENTS
2 medium chicken thighs
2 tbsp honey
1 chicken seasoning cube
1 tsp chilli powder
4 cloves of garlic, minced.
1 medium ginger, grated.
1 tbsp chicken peppery seasoning
2 tbsp sesame oil
6 tbsp soy sauce
1 tbsp white Sesame seeds
1 spring onion, julienne slices.
DIRECTION
• In a mixing bowl pour honey, add chicken seasoning, chilli powder, garlic, ginger, chicken peppery seasoning, sesame oil, soy sauce, whisk and set aside.
• Pat dry the chicken thighs with paper towel, place them in the honey mixture and massage the chicken.
• Cover with cling film and marinate for 2 hours.
• Place an aluminium foil in a baking pan, place the chicken thighs on and oven grill for 25 minutes.
• Whiles the chicken is being grilled, bring the left over marinade to a boil and let simmer down till thickened.
• Bring out the chicken from the oven, turn over and pour some of the marinade on and grill for another 10 minutes.
• Bring out the chicken again, turn over and pour the marinade on and grill for another 5 minutes.
• Sprinkle with white sesame seeds and spring onion.
• Honey grilled chicken is ready to serve.
