For the second episode of our new series „Cook It Like A German“ DW Food chef Felicitas Then invited DW’s „Meet The Germans“ presenter Rachel Stewart from the UK, into her kitchen to try to teach her how to cook an absolute classic of German cuisine: cabbage rolls!
Recipe for Kohlrouladen (German Cabbage Rolls)
Ingredients (for 4 people, preparation time approx. 1 hour)
1 Savoy cabbage
Salt
1 onion
1 tbsp. butter
1 bread roll
200 ml of milk
500 g minced meat
2 tsp hot mustard
½ teaspoon marjoram
Chili powder
Nutmeg, freshly grated
Black pepper, freshly ground
Kitchen twine
2 tbsp. clarified butter
100 g diced, streaky bacon
2 tbsp. tomato paste
300 ml meat broth
200 ml of cream
800 g waxy potatoes
2 tbsp. flat-leaf parsley, finely chopped
1 tbsp. cornstarch
4 tbsp. Water
Preparation
1. Firstly, you’ll need to peel off eight large, attractive cabbage leaves, and blanch them in salt water. Rinse them off in iced water, and pat dry with a kitchen towel. Finely dice an onion and sauté it in 1 tablespoon butter until translucent.
2. Soak the bread roll in the milk. Now season the minced meat with the mustard, marjoram, chili and nutmeg, salt, and pepper. Strain the milk from the bread roll and mix in with the cooled onions and egg.
3. Now spread a cabbage leaf out on a work surface and place a small mound of mince in its center. Fold in the sides of the cabbage leaf and roll the whole thing up, then secure it with the kitchen twine.
4. Now add the clarified butter to a pan and turn the cabbage rolls in it until they are fried all over, then place them into an oven dish. Next, put the bacon in the pan and fry it for another 5 minutes, then add the tomato paste. Cover it all with the stock and cream, allow it to boil down briefly, then thicken with cornstarch dissolved in water, and season with salt and pepper to taste.
5. Pour the sauce into the baking dish with the cabbage rolls and let it all simmer in a hot oven for about 30 minutes. You can serve Kohlrouladen with boiled potatoes and a sprinkling of parsley.

Ingredients
1 lb beef ground and/or pork ground mixed
1 tbsp salt
1 tbsp pepper
1 tbsp paprika
1 tsp nutmeg
1/2 onion, minced (can be fried first)
1 egg
1 tbsp sour cream
Juice of a half lemon (incl. zest)
Fresh parsley
Mix all above ingredients with clean hands or spatula:
1 whole cabbage
2 tbsp oil
3 cups beef broth, or water with beef cube
2 tbsp tomato puree
1 cup of whole cream, or 2 tbsp sour cream
Instructions
Bring a big pot of water to boil, turn on medium.
Cut out the root cone, discard
Add the whole cabbage to the hot water and cook 5 to 10 minutes, remove.
Leaves should come off easy.
Mix the ground beef with the first 9 ingredients.
Take two or more leaves, lay the meat mixture on top, roll it and tie with kitchen yarn
Heat a pan with oil on high and fry the Krautwickel until they get color and a few brown spots.
Pour in the beef broth, add beef cube and tomato puree, stir and cover.
Cook on low/medium heat for 30 minutes.
If you like it thicker, mix some flour with water and combine with the liquid with a whisk. Bring it to a boil to thicken.
Add 1 cup of whole cream.
Season gravy with salt, pepper and white wine to taste
Remove and place on a hot serving plate.
Options: Instead tying the stuffed cabbage with kitchen yarn, it could be squeezed in a clean cotton towel to keep the form. Instead of pan frying, the stuffed cabbage (wrapped in bacon) can be baked in the oven with the broth at 375F for about 45 minutes. Another option is to prepare the cabbage rolls in the Instant Pot: 2 cups water, 1, onion, 1/2 cup wine. place cabbage rolls on a trivet. Close top and high pressure for 13 minutes with 5 minutes slow release.

Notes
Can be served with mashed or boiled Potatoes. Season gravy to taste with salt pepper and some white wine.

Bierocks is quick and easy to prepare. A dough filled with cabbage, hamburger, and onions. I also add green bell pepper and garlic which is optional it could go without.

1 package frozen roll dough
1 1/2 pounds lean ground beef
1-2 cups cabbage
2 tablespoon butter/margarine
1/2 cup chopped onions
1/4 cup green bell pepper
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon ground black pepper
