***DOUGH RECIPE, MAKES ENOUGH FOR FOUR PIZZAS***
2 1/4 cups (530 ml) warm water
1 tbsp sugar (12g) sugar
1 tbsp (9g) active dry yeast
2 tbsp (30 ml) olive oil
1 tbsp (18 g) kosher salt
5 cups (600g) bread flour, plus more for working the dough
additional oil for greasing the dough
Start the dough by combining the water, sugar and yeast in a large bowl and let sit for a few minutes. If the yeast goes foamy, it's alive and you're good to proceed (if it doesn't, it's dead and you need new yeast). Add the olive oil and salt and 5 cups (600g) of bread flour. Mix until just combined, then start kneading. Add just enough additional flour to keep the dough workable (i.e. not too sticky) and kneed until you can stretch some of the dough into a thin sheet without it tearing. (NOTE: You will probably need to add a lot more flour. The quantity I give here is just a base line to get your started.)
Divide the dough into four equal balls and put them in four containers (ideally glass) and lightly coat the balls and the interior of their containers with olive oil. Cover, and either rise at room temperature for two hours, or put them in the refrigerator and let them rise for 1-7 days. (I prefer the long, cold rise.)
Potato, Rosemary and Garlic Pizza/ The Starch Solution
Potato, rosemary and garlic pizza recipe is what I will be sharing with you today. This potato, rosemary and garlic pizza is oil free and gluten free. It is also starch solution compliant and weight loss friendly. Yes you can still have pizza and lose weight! Full recipe below.
Preheat oven 450 degrees
First prep the potatoes
1 Yukon gold potato sliced very thin ( I used a mandolin)
Add potatoes to a bowl of cold water and soak 10 to 15 minutes set aside.
Recipe for the crust
1 cup chick pea flour
1/2 cup masa
3/4 tsp salt
1 1/4 cup warm water
1/4 cup unsweetened apple sauce
Add chick pea flour and masa and salt in a large bowl and mix. The add warm water and stir to combine and lastly add the apple sauce, mix well.
Pour pizza dough into a line 9 x 12 pan and spread into a even layer. Bake in oven for 15 minutes until set and slightly golden.
In the mean time...
Recipe for the rosemary, garlic spread
1 T fresh rosemary chopped
3/4 T minced garlic
1 T chopped shallots
1 tsp salt
Add all ingredients to a small bowl and mix well. set aside
Next lay out a clean dish towel and lay potatoes in a single layer and then cover with another clean dish towel and pat dry..
When the first baking of the pizza is done, using a pastry brush, brush a thin layer of the rosemary garlic mixture on top of crust. Add the potato slices to the pizza overlapping them a bit. Sprinkle with onion, garlic powder and smoked paprika and a bit more rosemary. and bake another 15 to 20 minutes. You can broil for the last couple of minutes if you want it more brown.

Potato & Leek Soup -
3 Tbsp (42g) - Clarified Butter or Regular Unsalted Butter
4 - Large Leeks, Roughly Chopped
3 - Garlic Cloves, Roughly Chopped
4 - Small Potatoes, Cubed
1 Litre (4 Cups) - Vegetable or Chicken Stock
180ml (3/4 Cup) - Thickened or Whipping Cream
Seasoning To Taste
Bacon, Apple & Crispy Sage -
1 Tbsp (14g) - Clarified Butter or Regular Unsalted Butter
120g (4.2oz) - Streaky Bacon, Large Diced
1 - Apple, Peeled & Small Diced (I Used Royal Gala)
12g (0.4oz) - Fresh Sage, Roughly Chopped or Left Whole
