How To make Garbanzo Stew (Lf)
1/2 c -Water
Onion; chopped 2 Garlic cloves; minced
16 oz Tomatoes; chopped
1/2 ts Paprika;
1/2 ts Dried oregano;
1/4 ts Pepper; black
ds Hot pepper sauce; 16 oz Garbanzo beans; drained
-& rinsed 1 c Winter squash; peeled &
-diced 1 1/4 c Spicy tomato juice
2 c Fresh spinach; chopped
PER SERVING:
210 x *cals
7 x *gm protein
*gm fat 41 x *gm carbo
669 x *mg sodium
9 x *gm fiber
Place water, onion and garlic in a large pot. Cook, stirring occasionally, until onion is softened slightly, about 5 minutes. Add tomatoes (including tomato liquid) and seasonings. Cook for 5 more minutes. Add garbanzo beans, squash and tomato juice. Cover and cook for 30 minutes, until squash is tender. Stir in spinach and cook until softened, about 2 to 3 minutes. Serves 4. Author's Note: Serve this hearty dish over brown rice or mashed potatoes, or accompany it with thick slices of whole-wheat bread. Mediterranean Chickpea Stew: Ready in 30 Minutes!
Get this recipe and many more on my website:
Serves 4:
¼ cup olive oil
1 onion, finely chopped
2 small carrots, diced
2 small potatoes, diced
3 garlic cloves, grated
15 oz canned tomatoes, pureed
15 oz canned chickpeas (garbanzo beans), drained and rinsed
Salt & freshly ground black pepper
½ teaspoon ground sumac
Pinch of crushed red pepper flakes
Optional: 6 oz feta cheese, diced
Garnish: finely chopped scallions, parsley, and/or mint
Optional: diced red peppers (from the jar), 1-pound chopped baby spinach, serrano chilies
Combine the olive oil, diced onion, carrot, and potatoes in a large skillet over medium heat. Season with salt and pepper. Cook for 10 minutes or until vegetables are tender.
Add garlic and cook for 30 seconds until warmed through taking care not to burn it.
Add tomatoes, chickpeas, salt, crushed red pepper, and sumac. Cook over medium-high heat for 10-15 minutes until sauce thickens and vegetables are fully cooked.
Taste and adjust seasoning if needed. Add feta cheese and garnishes. Serve with some toasted bread. Enjoy!
Note: If adding spinach or any other veggies, add them along with the chickpeas.

It's excellent as a tasty and easy everyday dinner or a make-ahead meal, as the chickpeas become even more flavourful the day after.
⭐️ Ingredients
2 tablespoons extra virgin olive oil
1 large yellow onion
1 large carrot
1 stalk celery
2 cloves garlic
1 inch ginger
1 teaspoon cumin
1 teaspoon turmeric
¼ teaspoon red pepper flakes or more to taste
2 cans (15-ounce each) diced tomatoes
1 cup water
2 cans (15-ounce each) chickpeas
10 ounces sweet potato about 1 medium
1 teaspoon salt or more to taste
⅛ teaspoon black pepper

30 grams extra virgin olive oil
