How To make Fried Liver with Mustard Sauce
1 lb Beef liver, sliced
1/2 ts Salt
1/2 ts Paprika
1 tb Vegetable oil
-MUSTARD SAUCE: 1 tb Margarine
1 c Water
1 tb Worcestershire sauce
1 tb Chopped dill pickle
1/3 c All-purpose flour
1/8 ts Freshly ground pepper
1 tb Margarine
1 Clove garlic, minced
1 md Onion, chopped
1 tb Cornstarch
1 tb Dijon mustard
Cut liver into serving pieces and pat dry with paper towels. Combine flour, salt, pepper, and paprika in a pie plate. Dip liver in mixture to coat both sides well. Heat margarine and vegetable oil in a heavy skillet. Saute garlic until golden. Add liver and brown quickly, about 2 minutes for each side. Remove to a warm platter and keep warm while preparing sauce. For sauce, melt margarine in the same skillet and stir in onion; saute until cooked through. Mix together water, cornstarch, Worcestershire sauce, and mustard. Blend mixture into skillet and cook, stirring, for 2 minutes. Add pickle and cook 1 minute. Add liver to sauce and heat through. SENPAI'S FRIED CHICKEN:
BRINE:
1 whole chicken (cut into 10 pieces)
4c butter milk
1 whole lemon (juiced but use the whole thing)
6tbs ap flour
3tbs garlic powder
3tbs onion powdwr
3tbs paprika
2tbs cayenne pepper
1.5tbs black pepper
2tbs MAGIC
1.25tbs ginger
1/4c fresh rosemary
CHICKEN DREDGE:
2.5c all purpose flour
1c corn starch
1tbs MAGIC
MAGIC SEASONING
1/2c salt
2tbs sugar
2tbs MSG
- brine chicken overnight (16+ hours)
- drain off a little of the batter then go straight into the dredge, pressing it in
- fry at 300 for 5-7 minutes
- rest for at least 30 minutes
- then fry again at 300 for 3-4 minutes

✅ Ingredients:
• chicken liver – 1,8 lb | 800 g
• onion – 10,5 oz | 300 g
• garlic – 2 cloves
• sour cream – 14 oz | 400 g
• mustard – 2 tsp
• butter – 1 oz | 30 g
• salt to taste
• pepper to taste
• dried oregano – ½ tsp
• dried basil - ⅓ tsp
• dried thyme - ⅓ tsp

• carving board
• pan
???? Preparation:
1. Cut the chicken liver into halves, remove the veins and fragments of green-yellow to have it not bitter.
2. Cut the onion into half rings.
3. Dry well the liver with paper towels and cut into pieces.
4. Heat a pan with the butter, add the onion and fry over medium heat for 5-7 minutes.
5. Push the onion to the sides making a space in the middle of the pan.
6. Fry the chicken liver by parts for 5 minutes over medium heat, not all the amount at a time as it will be boiled not fried then.
7. Add salt and ground black pepper to taste, the minced garlic, mustard, oregano, basil and thyme.
8. Stir and fry for a minute over medium heat.
9. Add the sour cream, stir and simmer over medium heat for 10 minutes stirring occasionally.
10. Serve the sour cream chicken liver hot having sprinkled with chopped-up greens. Mashed potato, pasta or boiled rice are perfect to garnish it.
