SENPAI'S FRIED CHICKEN:
BRINE:
1 whole chicken (cut into 10 pieces)
4c butter milk
1 whole lemon (juiced but use the whole thing)
6tbs ap flour
3tbs garlic powder
3tbs onion powdwr
3tbs paprika
2tbs cayenne pepper
1.5tbs black pepper
2tbs MAGIC
1.25tbs ginger
1/4c fresh rosemary
CHICKEN DREDGE:
2.5c all purpose flour
1c corn starch
1tbs MAGIC
MAGIC SEASONING
1/2c salt
2tbs sugar
2tbs MSG
- brine chicken overnight (16+ hours)
- drain off a little of the batter then go straight into the dredge, pressing it in
- fry at 300 for 5-7 minutes
- rest for at least 30 minutes
- then fry again at 300 for 3-4 minutes

Sautéed Calves Liver With Mustard Sauce
Grass-fed Stanger Angus Liver.
I was excited to receive fresh, not frozen, liver with the 1/4 Cow that I order from the Stanger’s. It is not common to find liver of this quality. It exceeded my expectations in taste, texture and overall quality. The Stanger’s produce a top notch product. It’s likely you can get fresh liver from your local butcher and worst case you can get it frozen from the Grass-fed Beef Rancher at your local Farmers Market. Get to know these people and support them.
This is an in-depth tutorial. Sautéed liver is a simple task. Finding quality liver cut to an ideal size is the trickiest part. I ended up plating this with mashed potatoes and the Mustard-Balsamic reduction. (Click on this link for the best mashed potatoes you’ve ever had).
As a bonus, there is “Option 2”; serve you liver with marinated cherry tomatoes, shaved red onions, cilantro, lime , and avocado. Warm up a couple of corn tortillas; cut the liver a little thinner; and you’ve got tacos.
I marinated my cherry tomatoes with salt, olive pile, and a pickled jalapeño relish, but chopped “hot” pickled jalapeños would great too!
