Ingredients
Olive oil Olitalia
300 grams of liver
1 cup of cornflour Teuta
2 cups of meat juice
a few salt
a few parsley
Preparation:
1. In a medium heat container fry the livers with olive oil Olitalia.
2. After about 5 minutes add the cornflour from Teuta, meat juice and stir well.
3. Put some salt. Remove from the fire and serve it on a plate. Above put some parsley. Enjoy your meal!

Pukani Chushleta – My All Time Favorite Bulgarian Appetizer - Bulgarian Recipes in English
Today I will share my all time favorite Bulgarian appetizer, or as we called in Bulgaria – RAZIADKA – an appetite stimulator.
Normally, my mom and dad use jalapeno peppers, but I decided to use those colorful ones for the purpose of this video.
Buy as many peppers as you wish, as this dish refrigerates very well and the leftovers are even better. For that many peppers, you will also need about 14 cloves of garlic, 2 cups of finely chopped parsley, half a cup of apple sider vinegar, half a cup of avocado or olive oil and salt.
Start by arranging the peppers in a large backing tray. Place them on the bottom rack of the oven and broil them on high for 15 minutes, or until the skin starts to brown. Then flip them over and the other side shouldn’t take more than 7 or 8 minutes under the broiler. Keep an eye on them because it all depends on how hot the top burner of your oven burns.
While the peppers are broiling, mince the garlic cloves in a bowl; add the chopped parsley, the half a cup of vinegar and 2 pinches of salt. I pureed it by hand, but if you have a food processor with a pulse function, the process is much faster. I just prefer to do it the way it’s done back home. And this is the consistency we are looking for.
At this point, the peppers should be all done. Once cooled, arrange them in a shallow bowl (or two), and using a spoon spread the parsley topping evenly over them.
Finally, preheat the oil in a pan to just about burning point and when hot enough, pour it over the peppers and you should be hearing a sizzling sound….

Hibeş; a Delicious Vegan Mezze of Southern Turkey w/ Chef Gizem Yavuz

Please post your comments below. Today we'II make a really easy mezze called Hibeş, a tahini dip belongs to Antalya region.
It’s pretty much like hummus minus chickpeas.
Ingredients:
150 ml Tahini
Juice of one lemon
Juice of one bitter seville orange
2 cloves of garlic plus one for simit
Warm water
2 tsp cumin powder
2 tsp chili powder hot or sweet
Olive oil
Simit or day-old pita anything you can scoop your hibeş
Sesame seeds
Salt
First of all preheat oven to 180 degrees for simit crutons.
Slice my simit and put them on my baking paper lined oven tray, drizzle some olive oil, sprinkle some salt and toss it well. Spread the simit slices on a baking sheet or tray in a single layer. Bake these until they get golden brown. They can easily burn, so watch out.
While they are browning, combine all the remaining ingredients.
Tahini first, grating garlic cloves, cumin and chili powder, some salt.. this is bitter orange or seville orange, probably the most Mediterranean ingredient you can have, if you can’t find it dont worry, just replace the whole amount with lemon, use the juice of one bitter orange and one lemon.
Mix it. It will thicken and look grainy at this point, but it will loosen as start to add warm water. Add water until it loosens again. And stop when it is again but still at consistency you can dip your simit.
Let it rest at room temperature for spices and acid to marry.
