The Best Bulgarian Appetizer - Peppers with Garlic and Parsley - Bulgarian Recipes in English
Pukani Chushleta – My All Time Favorite Bulgarian Appetizer - Bulgarian Recipes in English
Today I will share my all time favorite Bulgarian appetizer, or as we called in Bulgaria – RAZIADKA – an appetite stimulator.
Normally, my mom and dad use jalapeno peppers, but I decided to use those colorful ones for the purpose of this video.
Buy as many peppers as you wish, as this dish refrigerates very well and the leftovers are even better. For that many peppers, you will also need about 14 cloves of garlic, 2 cups of finely chopped parsley, half a cup of apple sider vinegar, half a cup of avocado or olive oil and salt.
Start by arranging the peppers in a large backing tray. Place them on the bottom rack of the oven and broil them on high for 15 minutes, or until the skin starts to brown. Then flip them over and the other side shouldn’t take more than 7 or 8 minutes under the broiler. Keep an eye on them because it all depends on how hot the top burner of your oven burns.
While the peppers are broiling, mince the garlic cloves in a bowl; add the chopped parsley, the half a cup of vinegar and 2 pinches of salt. I pureed it by hand, but if you have a food processor with a pulse function, the process is much faster. I just prefer to do it the way it’s done back home. And this is the consistency we are looking for.
At this point, the peppers should be all done. Once cooled, arrange them in a shallow bowl (or two), and using a spoon spread the parsley topping evenly over them.
Finally, preheat the oil in a pan to just about burning point and when hot enough, pour it over the peppers and you should be hearing a sizzling sound….

Mücver (Fried Zucchini Fritters) Amazing Mezze Recipe with Chef Gizem Yavuz
We are here with guest chef Gizem Yavuz and with her delicious recipe; Zucchini Fritters !
We'll make zucchini fritters which we simply call mücver that is not just mezze, but also a perfect appetizer, side dish or quick lunch. In the Ottoman times, it was made with minced meat; no hint of of zucchini or any vegetables.
Ingredients:
Zucchini
Leeks
Dill and parsley
Eggs
Flour
Feta cheese
pinch of baking powder
Frying oil - I’ll use mild olive oil which has a bit higher smoke point compared to extra virgins
Yoghurt
Salt and pepper

Yatimche Ab dough Khiar - Street Food
While I was looking for local Tehrani Street Food , I found out a traditional food called Yatimche. made of fried eggplant, Tomato and fried Onion which is eaten with Rice or bread.
Next dish is Eggplant, squash, fried Potato ,mushroom and tomato paste.all the food i found here is suitable for vegeterian.
The colorful bowls are Doogh ( Ayran in Turkish) made of yogurt and water and topped with dried Rose petal,dried pepermint , dried Dill and Echium, Borage ( Gol-Gav-Zaban) which all have healing properties.
When he wants to serve it ,first he puts some cucumber and walnut in the bowl and pour the Doogh on it . It was so popular to eat this in hot and dry summer days of Tehran because it is very energizing and hydrating.

300 grams of liver
1 cup of cornflour Teuta
2 cups of meat juice
a few salt
a few parsley
Preparation:
1. In a medium heat container fry the livers with olive oil Olitalia.
2. After about 5 minutes add the cornflour from Teuta, meat juice and stir well.
3. Put some salt. Remove from the fire and serve it on a plate. Above put some parsley. Enjoy your meal!
