How To make Fresh Tuna with Linguini
1 pound linguini
cooked
2 tablespoons olive oil
2 tablespoons butter
1 pound fresh tuna :
cubed (1")
1 small clove garlic pressed
6 anchovy fillets :
chopped
1 tablespoon capers
1/4 cup fresh parsley Italian, chopped
1 lime :
juice of OR
1/4 cup white wine
salt to taste freshly ground black pepper :
to taste fresh parsley -- garnish
LINGUINI Heat pasta water to boiling. Add pasta and cook according to package directions. Do *NOT* overcook! FRESH TUNA SAUCE Add olive oil to a hot skillet and reduce heat to medium. Add butter, tuna pieces, pressed garlic, anchovies, capers and parsley. Gently saute until tuna is just cooked. Remove from heat and squeeze lime over tuna mixture OR add 1/4 cup white wine to skillet to deglaze and toss with ling uini. SERVING Arrange cooked and drained linguini on a large spaghetti platter. Lightly toss tuna mixture with linguini and serve immediately.

Christmas Eve for us is just not the same without a bowl of pasta with tuna. This recipe is inspired by Steve’s uncle. Steve’s Zio Iginio whom we lost last month was born and raised in Trento which is the Northern part of Italy. He lived in the mountains right on the border of Germany and made this dish for us all the time. This is my take on his pasta with tuna and inspired by him and hopefully honoring him today. Rip Zio Jimmy we all miss you and love you. This recipe makes 2 large portions or 3 small. You will need:
Ingredients:
1.5 large cans of tuna — discard the oil or water
5 tablespoons butter
tablespoon olive oil
pepper to taste
250 grams short pasta of choice cooked in boiling salted water
2 ladles of pasta water
chilli pepper oil + fresh parm optional
**Please Note- You can use as much or as little tuna as you like and this would be lovely with salmon too. Please adjust the pasta water accordingly to how creamy you like your dish. The pasta water should be as salty as the sea and this is your only chance to flavor the pasta.
Directions:
In a skillet on medium heat add the butter and olive oil and make sure it shimmers.
Drain the oil or water from the cans of tuna and add it into the butter and olive oil.
Break it up and cook until the tuna “ pops ” and it’s nice and golden. Add some pepper to taste and take it off the heat.In the meantime make sure you are boiling your pasta of choice in salted water until al-dente. When the tuna is nice and golden take it off the heat completely, once the pasta is finished boiling add it in with the pasta starchy water which is liquid gold.Top it off with some fresh Parm or chilli oil. Enjoy and please share it with your love ones.

Linguine with Tuna and Cherry Tomatoes
Serves 4
Recipe by Mark Calaminici | Food Loves Company
Ingredients
1 lb Linguine
¼ cup extra virgin olive oil
3-4 tbsp butter
¼ cup white onion, chopped
salt
freshly cracked pepper
2-3 cloves garlic, thinly sliced
chili flakes, to taste
1 pint cherry tomatoes, halved or quartered
½ cup castelvetrano olives, pitted and chopped
¼ cup reserved pasta water
1 can of tuna in olive oil (Callipo or Rio Mare brand)
¼ cup fresh parsley, chopped
Method
1. Cook the Linguine in a large pot of boiling salted water until al dente, according to package instructions. Reserve 1/4 cup of pasta water.
2. In a large frying pan over medium heat, heat extra virgin olive oil and butter. Add white onion, garlic, chili flakes and season with salt and freshly cracked pepper. Saute until lightly browned and tender.
3. Add cherry tomatoes and sauté until tender and blister a bit. Add olives, a bit of pasta water and the tuna. Saute to form a sauce, adding more pasta water if needed. Add cooked linguine and toss to incorporate all ingredients. Add fresh parsley, toss and serve.

INGREDIENTS:
Serves 2
200g Pasta
1 can of Tuna
60g of Cherry Tomatoes
20-30 Capers to taste
2 cloves garlic
Extra Virgin Olive Oil
Parsley
Salt
Method
Step 1
Slice tomatoes in half. In a pan add olive oil, garlic, parsley stems and tomatoes. Once the tomatoes have softened remove the garlic and parsley stems
Step 2
Add in capers. Boil the pasta in salt water according to packet instructions. Add pasta to the tomatoes along with 1/2 a cup of pasta water. Add tuna and garnish with parsley and olive oil
