Blueberry French Toast Casserole - How To Make Blueberry French Toast Bake - Breakfast and Brunch
Hello my Friends and welcome to my Southern Kitchen, Happy Father’s Day to all the Fathers out there!
Are you looking for a great Breakfast or Brunch dish to serve for your Dad? Today’s recipe I am making Blueberry French Toast Casserole AKA Blueberry French Toast Bake!
Super flavorful, decedent, topped with fresh blueberries and a Brown Sugar Streusel topping and baked til golden perfection! Everyone will love and enjoy this and perfect to serve at any Brunch occasion!
1 loaf (1 pound) Texas toast, day-old
1 cup fresh or frozen blueberries
8 large eggs
2 1/4 cups evaporated milk
2 teaspoons freshly squeezed lemon juice
1/2 teaspoon ground cinnamon
3/4 cup packed light or dark brown sugar
1 tablespoon pure vanilla extract
Streusel Topping
1/3 cup packed light or dark brown sugar
1/3 cup all-purpose flour, spooned and leveled
1/2 teaspoon ground cinnamon
Pinch salt
6 Tablespoons unsalted butter, cold and cubed
Maple syrup, optional
Whipped cream, optional
Extra blueberries, optional
Ellen’s Magic: In place of blueberries, you can add in strawberries or raspberries. You may also use any thick bread (Challah, French bread, Brioche). You can make this ahead of time and bake it later.
Grease a 9×13-inch baking dish, with butter or nonstick cooking spray. Slice, then cut the bread into cubes, about 1 inch in size. Spread the cubes into the prepared dish and top evenly with blueberries. Set aside.
In a large bowl, add in the eggs, lemon juice, evaporated milk, cinnamon, brown sugar, and vanilla extract and whisk together well combined and no lumps of brown sugar remain. Pour the custard over the bread. Cover the pan tightly with plastic wrap and refrigerate overnight.
Preheat Oven to 350 Degrees
Remove the pan from the refrigerator and remove the plastic wrap.
For the streusel topping: In a medium or large bowl, add in the brown sugar, flour, cinnamon, and salt and whisk together until blended. Add the cold butter cubes and cut it in using a pastry blender or two forks until it reaches course crumbs. Sprinkle the streusel topping over the soaked bread. Bake for 45 to 55 minutes or until golden brown on top. Serve warm and garnish with maple syrup, whipped cream, and blueberries (if desired) and enjoy!

Baked Blueberry Pecan French Toast recipe
Ingredients
1 loaf Baguette
6 whole Eggs
1 cup Milk
½ teaspoons Nutmeg
1 teaspoon Vanilla
¾ cups Brown Sugar, Divided
1 cup Pecans, Chopped
1 teaspoon Butter
½ cubes Butter
2 cups Fresh Blueberries
Preparation Instructions
Butter a 9×13 baking dish. Cut 1 1/2 inch slices from the baguette and arrange flat in one layer in the dish (about 6-8 slices).
Whisk together eggs, milk, nutmeg, vanilla, and 1/2 cup brown sugar in a large bowl and pour evenly over the bread. Refrigerate mixture, covered, until all liquid is absorbed by the bread, at least 8 hours and up to 1 day.
When you are ready to bake and serve, preheat oven to 350 F.
Spread pecans evenly in a shallow baking pan and toast in middle of oven until fragrant, about 4 minutes. Toss pecans with 1 teaspoon butter.
Alternately (and this is what I did), toast the pecans in a skillet in one layer over medium heat, stirring often. Toss with 1 teaspoon butter. (I did this the night before to save time the morning of.)
Sprinkle pecans and blueberries evenly over bread mixture.
Cut remaining 1/2 stick butter into pieces and heat with remaining 1/4 cup brown sugar in a small saucepan, stirring, until butter is melted and sugar is dissolved.
Drizzle butter mixture over bread and bake mixture 30 – 40 minutes or until any liquid from blueberries is bubbling.
