1 teaspoons (3 gr) cornstarch
1/4 teaspoon salt
1/2 cup (100 gr) granulated sugar

1/2 tsp vanilla

Fortune Cookies Recipe (No Oven)
This might be the only Fortune Cookie recipe that is made without the oven!

(makes about 12-15 fortune cookies)
INGREDIENTS
1 egg white
1/8 tsp vanilla extract/ essence
1/4 cup flour (sifted)
pinch of salt
3 tbsp sugar
some FORTUNES! (optional)
PREPARATION
1. Into a medium bowl, add in the egg white & vanilla extract/ essence and whisk until foamy (not too foamy & stiff).
2. Then add in the sifted flour, salt & sugar and whisk until combined. (If the batter is too thick, add in a little bit of water to make the batter smooth and runny)
3. Lightly grease a non-stick skillet over low heat. Add about a teaspoonful of batter onto the heated skillet and spread it to make a thin, even circle. (Try to make the disc as thin as possible otherwise the cookie won't be crispy)
4. Cook both sides until golden.
5. After cooking both sides until golden, this is the part where you have to work quick! Take out the disc from the skillet (place the smooth side of the disc down) & place a fortune in the middle of the disc. Then bring the two sides of the disc to fold it in half. Place the folded edge across the rim of a mug and pull the pointed edges down the sides of the mug. Finally, place the fortune cookie in a muffin tray or in an egg carton until the cookie has hardened in its shape.
6. Eat right-away & when leaving the cookies to harden in the egg carton, don't leave it for too long because it will be soft. Try to place the hardened fortune cookies in an airtight container until consumed. The fortune cookies are best consumed on the day they are made.
Fortune Cookie Cereal!

Lunar New Year Fortune Cookies Recipe

Lunar New Year is about family gatherings, embarrassing childhood stories, bomb-ass homemade food, and obviously long-awaited red envelopes hehe. It’s also about looking forward to the future and embracing new opportunities. These fortune cookies are a great treat to share with loved ones and see who will be lucky this year and gets all the (mis)fortune ;)

RECIPE:
Ingredients:
90g egg whites
135g sugar
45ml water
1.5 tsp vanilla extract
60ml melted butter
15g cornstarch
105g flour
a pinch of salt
Instructions:
1. Preheat the oven to 170C.
2. Whisk together egg whites and sugar.
3. Add water, vanilla extract, a pinch of salt, and melted butter. Whisk again. Make sure the butter is not too warm.
4. Sift in flour and cornstarch and mix together until the batter is smooth and runny without any lumps.
5. Pour a teaspoon of batter on a baking tray covered with a baking mat/sheet and spread into 8-10cm circles. Start with two circles at a time to make sure you have enough time to shape the cookies. Don’t make more than 4 circles at once.
6. Bake for 6-8 minutes, until the edges become golden grown. Do not overbake the cookies, or it will be hard to shape them.
7. Flip the cookies over and quickly put the paper inside. Fold the cookie over and then bend it using the edges of a cup/glass. Work very quickly while the cookies are still hot and pliable.
8. Put the folded cookies into a muffin tin or small glasses to keep the shape until they firm up.
9. Once the cookies are fully cooled, store them in an airtight container.
How to temper chocolate:
Melt 70% of white chocolate till it reaches 45C. Mix well, then add the remaining 30% of chocolate and mix until the temperature reaches 27-29C. If the chocolate has fully melted and its temperature is higher than 30C, add a bit more chocolate. When the chocolate is at 27-29C, it’s ready to use. Always check the temperature and when it goes below 27C, warm it up with a blow dryer/fan for a little bit to maintain the working temperature of 27-29C.
